Banana Chia Pudding with Chocolate. Vegan And Gluten Free

This banana chia pudding is such a creamy delight. You can make it faster than an instant pudding and it doesn’t require any cooking. All you need to do is to blend five ingredients together, serve in your favorite glass and refrigerate for an hour. The flavor and the texture are so close to a classic pudding. The only difference is that this one contains good for you ingredients, like fruit, cacao and chia seeds. Also, there is no cane sugar in this pudding. The sweetness comes from the bananas and some maple syrup.

You can start the day with a dessert without feeling guilty about it. One serving of this delicious banana chia pudding will provide you with protein, fiber, heart healthy fats and antioxidants. On the days when I tested this recipe, I noticed that every time I eat the pudding I feel full for much longer. Although, the serving size wasn’t that big. That is because of the huge amount of fiber in chia seeds in combination with protein and healthy fats.

Ingredients for the banana chia pudding

  • Very ripe bananas – the sweetness in this creamy dessert comes mostly from the natural sugars of the ripe bananas. They are also high fiber, vitamins and essential minerals like potassium.
  • Maple syrup – it is a natural sweetener with a lower glycemic index than sugar. This means that it won’t cause a huge spike in blood sugar.
  • Chia seeds – these tiny little seeds are packed with nutrients and are considered a superfood. They contain protein, fiber, vitamins, minerals, antioxidants and the essential omega- 3 fatty acids.
  • Cacao powder – is raw cacao. It is less processed and higher in nutrients. I like to use it in my recipes instead of cocoa powder, but you can substitute with unsweetened cocoa powder which is easier to find and more affordable.
  • Milk of choice -depending on the milk you use this recipe can be vegan and dairy free. I have nothing against cow’s milk, but I used cashew milk because that is what I had.

Helpful tips about making the Banana Chia Pudding

You are going to need a powerful blender. You can also use a smoothie maker or a food processor.

The chia seeds may clump together. When I tested the pudding recipe there was were some chia seeds stuck on the bottom of the blender. I used a long spoon to scrape them and I blended again. Stir and blend several times until you have a smooth consistency.

Taste the pudding for sweetness before you refrigerate it. You might need more maple syrup.

Add toppings that you like. I used coconut cream, chocolate and some sliced banana.

Equipment

  • Food processor, blender

Ingredients

  • 2 very ripe bananas plus more for topping
  • ¼ cup maple syrup or to taste
  • cup chia seeds
  • 2 Tbsp unsweetened cacao powder or cocoa powder
  • 1 ½ cups milk of choice I used cashew milk

Toppings

  • coconut or heavy cream, yogurt, bananas, chocolate or anything you want optional

Instructions

  • Peel and add two ripe bananas in a blender or a food processor. Then add the chia seeds, cacao powder, milk and maple syrup.

  • Blend until smooth. You might need to stir and blend again if there are clumps of chia seeds.
  • Taste the pudding for sweetness. You might need to add more maple syrup if the bananas are not very sweet.
  • Divide between four cups, glasses or jars of your choice cover with plastic (or lid) and refrigerate for at least an hour.

  • Serve with your desired toppings. I served it with whipped coconut cream, sliced bananas and chocolate shavings.
  • Store the pudding for 4-5 days in the refrigerator. The pudding will get a bit thicker after it cools off.
