Bulgarian Walnut Cookies (Orehovki). Gluten, Grain and Dairy Free

Bulgarian walnut cookies are one of the most traditional desserts in Bulgarian homes. I grew up eating these cookies, and every Bulgarian knows them as orehovki. They are made with just a handful of simple ingredients. They don’t contain any dairy, flour or other grains. The outside is lightly crisp, while the center stays soft and chewy. These cookies are naturally gluten, grain, and dairy free, yet full of rich walnut flavor. If you love nut-based desserts, this traditional recipe is a must-try.

What Are Bulgarian Walnut Cookies (Orehovki)?
Bulgarian walnut cookies, known as orehovki, are a traditional Bulgarian dessert made primarily with ground walnuts and egg whites. They are naturally flourless and have been part of Bulgarian home baking for generations. The cookies are lightly crisp on the outside with a soft, chewy center and a rich walnut flavor.
Orehovki are most often prepared in the fall and winter months, when walnuts are freshly harvested and widely available. They were an affordable treat made from simple, local ingredients. Because of this, they became a staple dessert in many Bulgarian households.
When I was growing up in Bulgaria during Communism, the selection of sweets in stores was very limited. Only locally produced desserts were available. Imported candy or chocolate was not an option. Orehovki were always easy to find and were one of the most loved treats.
My mom made them often, and they were a big part of my childhood. My friends and I would collect money from our chores to buy orehovki and enjoy them while playing outside. Even today, these cookies taste like childhood to me.

Helpful Tips for Perfect Bulgarian Walnut Cookies
- Grind the walnuts finely to achieve a smooth mixture and the best cookie texture.
- Stir the walnut, egg white sugar mixture constantly over low heat until it thickens visibly.
- Do not let the mixture boil, as this will cook the egg whites too quickly and ruin the texture.
- Add the lemon juice, vanilla, and cornstarch only after removing the mixture from the heat.
- Baking time may vary, so watch the cookies closely, as walnuts can burn easily. I baked mine for about 18 minutes at 320°F. Bake until the centers were set and the edges were lightly golden.
- Do not move the cookies while hot. They are very soft right out of the oven. Let the cookies cool on the baking sheet for 5–7 minutes before transferring them to a cooling rack.
- If the cookies stick to the parchment paper or pan, they likely need more baking time. Return them to the oven for an additional 2–3 minutes if needed.

Serving Suggestions
Serve these Bulgarian walnut cookies as a simple dessert or afternoon snack. They pair especially well with coffee, tea, or a glass of milk.
For best texture, carefully transfer the cookies to a cooling rack and allow them to cool completely before serving.

Storage Instructions
Store the cookies in a zip-top bag or an airtight container at room temperature. They will keep well for 4–5 days, as long as they are stored away from moisture.
I don’t recommend freezing the cookies, because their delicate texture may be affected.
This recipe makes a small batch of about 10 cookies, so I doubt that you will have many leftovers to store.
