Burger Bowls with a Special Chipotle Sauce

These burger bowls are the perfect meal for a busy night. They are easy to prepare and will satisfy even the pickiest eaters. I don’t know many people who would say no to a juicy burger, fries and pickles. The special chipotle sauce brings the dish on another level. I always have this sauce in my fridge, and I serve it on top of salads, meat or as a dip.

I love a good burger but when I eat it with a bread bun, I feel like I ate a brick. Also, I can rarely finish one burger if I eat the bread. That is why I often prepare this lighter burger bowl version for myself. Sometimes I replace the burger bun with portobello mushroom caps.

Helpful Tips

Where to find chipotle salsa? I love chipotle salsa and I always have it in my pantry. You can find it at the ethnic section of any Walmart, Target or other big grocery store. I usually buy the San Marcos chipotle salsa. When I use the amount that I need for the recipe I pour the remaining salsa in a jar with a lid and store it in the refrigerator for a week.

If you serve more than two people, you can adjust the recipe. You need one burger, one cup of lettuce, one russet potato and half an avocado per serving.

Leftovers from the burger bowls won’t keep well in the fridge. The lettuce will wilt, the fries will become soggy and reheated burger is never the same.

Food Safety

Consuming uncooked eggs is associated with a risk of Salmonella contamination. This might lead to upset stomach, fever and in rare cases death. Infants, pregnant women, immunocompromised individuals and older adults should avoid eating raw eggs. 

If you have a problem with consuming raw eggs, you can mix a cup of your favorite mayonnaise with two tablespoons of chipotle salsa. It will taste the same taste, but the texture and thickness might be different.

Store the chipotle mayonnaise in a jar with a lid and in the refrigerator. Expiration date depends on the expiration date of the egg you’ve used. It can also decrease with opening the jar and scooping out of the mayonnaise too often. In my fridge the chipotle mayonnaise doesn’t last more than two days because I’m eating it obsessively.

How to cook beef Burgers

Cook ground beef until the internal temperature reaches 160F. Consuming raw or undercooked beef may cause food poisoning. You can use a food thermometer to check your beef patty. If you prefer to eat your burger well done increase cooking time to 8 minutes per side. I purchase 100% grass fed beef from a reliable butcher and I always cook my burger to medium rare temperature.

Equipment

  • Immersion blender

Ingredients

To prepare the fries

  • 2 russet potatoes
  • salt and pepper to taste

For the special chipotle sauce

  • 1 large egg
  • 1 cup oil
  • 2 Tbsp chipotle salsa  I use San Marcos or La Costeña
  • 1 tsp freshly squeezed lemon juice
  • salt and pepper to taste

To assemble the bowl

  • 2 cups chopped lettuce of choice I used iceberg
  • 2 Tbsp Barbecue sauce I used Kinder's organic sauce
  • 2 burger patties (8 oz each) I used 100% grass fed from Costco
  • 1 avocado
  • pickles to taste
  • thinly sliced red onion to taste
  • salt and pepper to taste

Instructions

To prepare the fries

  • I used an air fryer to make the fries, but you can use an oven or deep fryer. Wash and peel the potatoes and cut them to straight cut fries or wedges. Transfer them in a bowl. Add a drizzle of oil to the raw potatoes and add salt and pepper to taste.
  • Air Fryer Method Preheat the air fryer to 450F. Place the potatoes in a single layer (not touching). Air fry for 10 minutes.
  • Oven Method Preheat the oven to 450F. Line the potatoes on a baking sheet in a single layer. Bake for 15-20 minutes. Stir after first 10 minutes.

To prepare the chipotle sauce

  • Crack one egg in na wide mouth Mason jar.
  • To the same jar add the chipotle salsa, lemon juice, salt and oil.
  • Insert the immersion blender and place the blade at the bottom of the jar. Turn on the blender and keep the blade at the bottom of the jar for at least five seconds. Then slowly move the blender up until emulsion forms. Finally move it up and down until the rest of the oil incorporates.

To grill the burgers

  • Preheat a grill or a cast iron skillet to high heat (450-500F).
  • Form the beef patties and spread BBQ sauce on both sides. Season them generously with salt and pepper on both sides.
  • Grill the beef patty for 4-6 minutes (depending on thicknesses) and flip. Cook for another 4-6 minutes on the other side. Once the burgers are done cooking use a spatula to transfer them on a cooling rack. Rest the burger for at least 5 minutes before eating.

To assemble the bowl

  • Add one cup of chopped lettuce in each bowl. Add the cooked burger in the middle and place the pickles, fries, sliced red onions and avocado around it.
  • Add salt and pepper to taste and drizzle with the chipotle sauce. Serve and enjoy right away.
