This cake with plums and a cheesecake layer is everything I want in a dessert. Every bite is so heavenly. The sponge is light and fluffy, and the cheesecake is creamy. The thinly sliced plums on top are so beautiful. They add some tanginess which brings out the sweetness of the cake. I’m telling you this is the perfect dessert.

This dessert looks and tastes so good. You can prepare it for your family or bring it to a gathering. You can make any day special if you serve this cake with your afternoon coffee.

Equipment

To prepare this cake with plums you are going to need a hand or stand mixer.

You are also going to need mixing bowls and spatulas. I use a spatula when I add the dry ingredients in the batter. Fold them carefully until they are fully incorporated. Then you are going to need spatula to transfer the batter into the baking dish.

For this cake I used a 10-inch ceramic pie dish. You can use whatever you want and have, as long as it is oven safe. I recommend lining it with parchment paper or spraying it with nonstick spray before you pour the cake batter in.

To cut the plums to thin slices you’re also going to need a cutting board and a knife.

How To Bring Butter At Room Temperature?

To make the batter you are going to need butter at room temperature. I usually take the butter out of the refrigerator about forty minutes to an hour before baking. If you want to speed up the process cut the butter to smaller pieces. Sometimes, I warm up a bowl in the microwave oven and cover the butter with it to help it soften faster. Another method is to roll it or pound it with a rolling pin thinly. This will definitely soften the butter quickly.

How To Measure Flour? 

Always scoop more flour than you need in your cup and use a knife to level it off. If you have a scale, use it because measuring ingredients by weigh is always more accurate. One cup of flour contains exactly 4 oz or 125 grams of all purpose flour.

Helpful tips about preparing the cake with Plums

You need to prepare the cake mixture first. The butter must be soft and at room temperature, because the first step is to cream the butter and sugar together. Add one egg at a time and beat with the mixer until all liquids are incorporated.

Once you add the dry ingredients do not overmix. Use the mixer to stir on the lowest setting or use a spatula to incorporate the dry ingredients in the cake batter.

To prepare the cheesecake layer you also have to soften the cream cheese first. This will ensure that there are no lumps in your mixture.

Baking takes 30 to 35 minutes. I recommend checking the cake after 20 minutes in the oven. Every oven is different, and you wouldn’t want to burn your dessert.

Ingredients

Ingredients for the cake

  • ½ cup unsalted butter one stick, softened
  • 1 cup white granulated sugar
  • 3 eggs
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 raw plum thinly sliced to half moons, pit removed

For the cheesecake layer

  • 8 oz cream cheese softened, I used Philadelphia
  • ¼ cup powdered sugar
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

To prepare the cake

  • Preheat the oven to 355F. Oil an 10-inch pie dish or other oven-safe baking dish. You can also line with parchment paper if you prefer.
  • Add the softened butter with a cup of sugar in a mixing bowl. Use a mixer to beat on a high speed until the sugar is dissolved. Then add one egg and mix it in. Continue adding one egg at a time until you incorporate all three eggs in the mixture.
  • Add the vanilla extract and mix it in.
  • Then add the flour and baking powder to the bowl. Use a low setting on the mixer or a spatula to incorporate the dry ingredients until you get a smooth mixture. Do not overmix.

  • Pour the dough into an oiled, round pie dish with a 10-inch diameter.

To prepare the cheesecake mixture

  • Add the softened cream cheese to a clean bowl. Then add the powdered sugar and mix until incorporated. Finally add the egg and the vanilla and mix one last time.

To assemble the cake

  • Pour the cheesecake mixture on top of the cake mixture. Dip the back of a spoon in to the cheesecake mixture and draw random shapes to marble the two mixtures.

  • Wash one plum in half and slice it in half. Remove the pit and slice thinly the plum in a half-moon shapes.
  • Arrange the plum slices on top of the cake. You can do any arrangement that you want.

  • Bake for 30-35 min.
  • Remove from the oven and cool off at least 20 minutes before serving.
  • Store leftover cake in the refrigerator for 3-4 days.
