Cheesecake Swirl Cake – A Beautiful Fall Dessert With Plums

If you’re looking for a fall dessert that’s as gorgeous as it is delicious, this Cheesecake Swirl Cake is it. It starts with a soft, airy sponge base, topped with a creamy cheesecake layer that gets gently swirled into the batter before baking. The result is a beautiful marbled effect in every slice — light, tangy, and perfectly sweet.
What truly sets this cake apart is the topping. Just before it goes into the oven, I decorate it with thinly sliced plums arranged like little fans. As they bake, they soften and glaze naturally, adding a pop of color and a hint of tartness that balances the richness of the cheesecake. It’s simple to make but looks like it came straight from a bakery — the kind of dessert that makes people gasp before they take a bite.

Equipment
- Measuring spoons and cups are essential for any baking recipe. Use measuring pitchers for the liquid ingredients
- A hand or stand mixer is essential for this recipe.
- Mixing bowls – to mix the ingredients for the cake and cheesecake layer
- Spatulas. I use a spatula when I add the dry ingredients in the batter. Fold them carefully until they are fully incorporated. Then you are going to need spatula to transfer the batter into the baking dish.
- 10-inch ceramic pie dish. I recommend lining it with parchment paper or spraying it with nonstick spray before you pour the cake batter in.
- You also need oven mitts to protect your hands from the high temperatures.
- A cutting board and a sharp knife to cut the plums to thin slices

What Flour Works Best For this Cake?
For this recipe, all-purpose flour or cake flour are both excellent choices. If you prefer a sturdier but still tender crumb, stick with all-purpose flour. For an extra light and airy texture — almost like a sponge cake — cake flour will give you the most delicate result thanks to its lower protein content.
I’ve tested the cake with both and love it either way, so use whichever one you already have on hand. Just avoid bread flour, as its higher gluten content will make the cake too dense and chewy for this soft, creamy dessert.

Helpful tips for best results
Bring ingredients to room temperature.
Soften both the butter and cream cheese before starting. The butter needs to be soft so it mixes smoothly with the sugar and eggs for the cake batter. The cream cheese should also be brought to room temperature — take it out of the fridge 40–60 minutes before baking. This helps prevent lumps in the cheesecake mixture.
Do not overmix the batter.
Once you add the dry ingredients, switch your mixer to the lowest speed or fold them in gently with a spatula. Overmixing activates the gluten in the flour, which leads to a dense, bread-like texture instead of a light and fluffy cake.
Slice the plums as thinly as possible.
Use a sharp knife or mandoline to get even slices. Thinner slices not only look prettier when fanned out, but they also soften better in the oven and bake evenly without sinking.
Arrange the plums gently.
Press the slices lightly into the surface of the cheesecake layer — just enough so they adhere, but not so deep that they disappear into the batter.
Grease the baking dish well.
Either oil your baking dish generously or line it with parchment paper to make sure the cake releases easily after baking.
Watch the baking time.
The cake usually bakes for 30–35 minutes at 355°F (180°C), but ovens vary. Start checking around the 20-minute mark.
Check for doneness correctly.
Insert a toothpick into the cake portion near the edges — it should come out mostly clean. The center may still look slightly jiggly from the cheesecake layer, but it will set as it cools. Avoid overbaking or the cheesecake layer may dry out.

Serving and Storing
This cheesecake swirl cake needs a little patience before slicing — but it’s worth it! After baking, let it cool at room temperature for at least 30 minutes. The cheesecake layer will still be soft at this stage, so for the cleanest slices and best texture, chill it in the refrigerator for a few hours (or even overnight). The flavors deepen as it rests, and the swirl becomes more defined when fully set.
I baked mine in a 10-inch pie dish, which yields 8–10 generous slices. If you’re serving it at a gathering, you can cut smaller pieces and stretch it to 12 servings — people will likely come back for seconds anyway.
This cheesecake swirl cake is wonderfully versatile and fits almost any occasion:
- Perfect with an afternoon cup of coffee or tea
- Elegant enough for a fall gathering with family or friends
- Lovely for birthdays, holidays, or festive dinners
- Beautifully giftable — it’s guaranteed to impress someone you love
Store any leftovers covered in the refrigerator for up to 4–5 days. It actually tastes even better the next day once all the layers have had time to settle together.
