Healthy Chocolate Raspberry Truffles (Vegan, Paleo, Gluten Free)

These chocolate raspberry truffles are so satisfying and nutritious. If you have a craving for something sweet you can prepare them in no time. These truffles are made with fruit, almonds and raw cacao. There are no animal products and grains added in the recipe. Therefore, they are vegan and gluten free.

The hardest part about this recipe is forming the truffle. Take a little bit of the dough and flatten it between your palms. Then add the raspberry in the middle. You have to be careful not to crush the raspberry when you are forming a ball. Gently bring all the ends together and enclose the raspberry.
For this recipe I use cacao powder instead of cocoa powder. The cacao powder is raw and less processed. It is very important to use unsweetened cacao or cocoa powder.
I got 16 truffles, but you can get less or more than that. It depends on the size of your dates.
Store the truffles in a refrigerator for 3-4 days. Serve them chilled.

Ingredients
- 10 large pitted dates
- ½ cup almond flour
- 2 Tbsp coconut oil
- 16 raw raspberries
- 2 Tbsp unsweetened cacao powder plus a bit more to roll the truffles in
Instructions
- Add 10 pitted dates, ½ cup almond flour, 2 Tbsp coconut oil and 2 Tbsp cacao powder in a food processor. Mix and pulse until everything is combined and resembles dough.
- Take some of the dough and flatten it between your palms.
- Add a whole raspberry in the center of the dough.
- Form the truffle by gently folding the edges of the dough towards the middle. Don't squeeze too hard.
- Once your truffle is ready roll it in cacao powder. Continue making truffles until you are out of dough. Add them in an airtight container and refrigerate for at least 15 minutes before serving.
