Chocolate Raspberry Truffles (Vegan, Paleo, Gluten Free)

Chocolate Raspberry Truffles (Vegan, Paleo, Gluten Free)

Today I’m going to offer you a healthy desert that will satisfy your cravings without ruining your diet. These chocolate raspberry truffles are so nutrient dense. They are made with fruit, almonds and raw cacao. There are no animal products and grains added in the recipe. Therefore, they are vegan and gluten free.

Why should you make this recipe?

The chocolate, raspberry truffles are so delicious. The sweet caramel flavor of the dates pairs so well with the aromatic and slightly tangy raspberries. The cacao adds bitter notes, which are typical for any chocolate truffle. The overall flavor is so balanced and satisfying. I definitely recommend trying them.

This recipe is easy and fast. It takes about 20 minutes of prep time and 10 minutes of chilling. Unlike most desserts this one doesn’t require any cooking.

Since the truffles are raw, they are rich in valuable nutrients. Every bite contains fiber, vitamins and antioxidants. Dates are sweet but have lower glycemic index which means that they are not going to spike your blood sugar. The recipe is suitable for diabetics and people who avoid refined sugar.

Helpful tips

Make sure that all of your dates are pitted. One leftover pit can break your appliance.

Use large and juicy dates. If they are too dry you will not get the desired consistency.

The hardest part about this recipe is forming the truffle. Take a little bit of the dough and flatten it between your palms. Then add the raspberry in the middle. You have to be careful not to crush the raspberry when you are forming a ball. Gently bring all the ends together and enclose the raspberry.

For this recipe I use cacao powder instead of cocoa powder. The cacao powder is raw and less processed. It is very important to use unsweetened cacao or cocoa powder.

I got 16 truffles, but you can get less or more than that. It depends on the size of your dates.

Store the truffles in a refrigerator for 3-4 days. Serve them chilled.
