Substitutions
I created this recipe around flavors my family loves — something slightly spicy, smoky, and sweet. The jalapeño adds heat, the bacon and Gouda brings a smoky note, and the caramelized onions give a subtle sweetness. The coatings (pistachios, smoked paprika, and dill) add even more flavor and texture. Also, the different colors make the cheese balls look festive.
Feel free to customize this appetizer to suit your own preferences or what you already have at home. You can omit the bacon to make it vegetarian or skip the jalapeño if you don’t want spice. You can also use other coatings like walnuts, pomegranate seeds, Everything Bagel seasoning, or even dried cranberries. This recipe is very forgiving — just mix in the flavors your family enjoys most.

Helpful Tips
- Soften the cream cheese in advance. I take it out of the fridge at least 30 minutes to an hour before I start preparing this appetizer.
- Drain the cooked bacon from excess fat. Too much grease can make the cheese mixture oily and prevent the coatings from sticking well.
- Caramelize the onions in the bacon fat for extra flavor. This adds sweetness and depth that you don’t get from raw onions.
- Use an ice cream scoop for portioning. This keeps all three cheese balls the same size and helps with even cooking time and presentation.
- Taste the mixture before forming the cheese balls. Adjust the salt, pepper, and spice level before rolling, since it’s harder to fix after.
- Chill the mixture if it feels too soft. Ten to fifteen minutes in the fridge will make it firmer and easier to shape.
- Roll the cheese balls gently. Press just enough to help the toppings stick without flattening the shape.
- Serve with a variety of crackers. Different shapes and textures make the appetizer board visually appealing and fun to eat.

Serving
Serve the Christmas ornament cheese balls on a large platter or wooden board. Place crackers, pita chips, or sliced baguette around them so guests can easily build their own bites. Add fresh herbs, nuts, grapes, or pomegranate seeds for a festive look and extra color. For the cleanest cuts, provide small cheese knives or spreaders next to each cheese ball. Keep the platter chilled until just before serving so the cheese stays firm and the toppings look fresh.

Storage + Make Ahead
These cheese balls are perfect for preparing in advance. You can make the mixture up to 2 days ahead and keep it covered in the refrigerator. Shape the balls and add the toppings on the day you plan to serve for the best texture and color. Once assembled, store them in an airtight container in the fridge for up to 3 days. The flavors continue to develop over time, but the coatings look freshest when added close to serving. Leftovers will firm up in the refrigerator. Allow the cheese balls to sit at room temperature for 10–15 minutes before serving so they soften nicely again.
