For this recipe I used 16 oz, wide mouth Mason jars, but you can use other food safe containers. Just make sure that they have lids.
Easy Carrot Cake Overnight Oats
Ingredients
- 1 cup rolled oats
- 1 cup grated carrots about one large carrot
- ¼ cup raisins no sugar added
- ¼ cup unsweetened shredded coconut no sugar added
- ¼ cup dried or raw pineapple no sugar added
- 2 cups milk of choice I used cashew milk
- 3 Tbsp maple syrup or to taste
- 2 tsp cinnamon
Toppings
- yogurt, pecans, walnuts, coconut, maple syrup, coconut cream optional
Instructions
- In a bowl add the oats, carrots, shredded coconut, raisins, dried pineapple, milk, maple syrup and cinnamon. Stir well.
- Divide the mixture between two jars with lids. Store in the refrigerator overnight.
- In the morning add your favorite toppings and enjoy.
