Easy Chicken Quesadillas (Made with Just Two Thighs!)

Looking for a quick and easy way to make chicken quesadillas without using a whole pack of meat? These delicious quesadillas use just two chicken thighs and make three full servings—perfect for lunch, dinner, or meal prep. It’s part of my 5 meals from one chicken series, where I show you how to stretch a whole chicken into multiple budget-friendly, flavor-packed meals.

I prepare these quesadillas all the time for my family and they are a hit. For this recipe I also created a custom quesadilla spice blend that goes so well with the chicken. You can adjust the spice level depending on how much chipotle chilli powder you add. Therefore, you can make it mild or very spicy depending on your preference.

How to Make Chicken Quesadillas with Two Thighs?

Prep your ingredients and spice blend.

Cut the chicken thighs to bite sized pieces. Slice the onion and bell peppers thinly. Measure and mix all the spices in a bowl.

Cook the Filling

Preheat a 12-inch cast iron pan to medium high. Add the oil and the chicken to the pan and cook for about two minutes per side. Season the chicken with salt and pepper. Then remove it from the pan. In the same pan you cooked the chicken add the sliced peppers and onions. Cook them until they are soft and the onion is slightly caramelized. Season them with salt and pepper. Finally, combine the chicken with the vegetables and add the spice blend. Stir to combine and remove the pan from the heat.

You can also add mushrooms, canned beans or any vegetable you want.

Assemble the Quesadillas

Lay a tortilla flat. On one half, add shredded cheese, a scoop of the chicken and vegetable filling, and a bit more cheese on top. Fold in half.

Cook Until Crispy

You can either cook the quesadillas in a pan or in the oven. I find it easier if I crisp all quesadillas in a hot oven for about 10 minutes. Place them on a baking sheet with an oven safe wire rack on top. Then bake all quesadillas at once until they are slightly browned and the cheese is melted.

Slice & Serve

Let rest for a minute, then slice into wedges and serve with your favorite toppings.

Absolutely. Just use 4 thighs and double the other ingredients.

What tortillas work best?
Large, 10- inch flour tortillas are easiest to fold and crisp, but you can use corn if you prefer.
