Easy Grape Pudding Recipe – A Balkan Dessert (No Refined Sugar)

This easy grape pudding is a simple Balkan dessert that I grew up eating. Freshly squeezed grape juice is the main ingredient. I don’t add any refined sugar to sweeten it, but if the grapes are not too sweet I add a splash of maple syrup or honey. I thicken it with cornstarch and add walnuts and raisins for texture and flavor. It is so easy to prepare, yet full of natural sweetness from the grapes and raisins. Enough to satisfy your sweet tooth and avoid a sugar crash later on.

I learned this recipe from my mother, who made it every fall and winter. We prepared it when my family pressed grapes for wine and saved some of the fresh grape must. In my family, we call this dessert mustenitsa. Similar versions exist across the Balkans, but this is how we always made it at home. For me, this grape pudding carries memories of harvest days, family gatherings, and simple homemade desserts made with love. I still make it today as a comforting, naturally sweet dessert inspired by my childhood.

Why you should make this grape pudding?

This grape pudding uses minimal ingredients and comes together fast. You need only four basic ingredients, plus a little maple syrup or honey if needed. All ingredients are affordable and easy to find in any grocery store. The process is simple and beginner friendly. No chopping. No special techniques. This dessert is naturally gluten free, grain free, egg free, and dairy free. It works well for people with food allergies or specific diets. I do not use refined sugar. The pudding gets its sweetness from grape juice and raisins. It also offers nutritional benefits. Grapes provide vitamins and antioxidants. Walnuts are a good source of protein, fiber, and heart-healthy fats.

Ingredients for the grape pudding

  • Grapes – Use firm and sweet grapes. I like to use a mix of white and red grapes for this recipe.
  • Cornstarch -you can find it at any grocery store. It is usually in the baking aisle.
  • Walnuts – Use raw walnuts for maximum nutrition.
  • Raisins – If you want to keep this pudding sugar free I recommend buying raisins without added sugar.
  • Maple syrup (optional)– I add it only if the grapes are lacking sweetness. You can also use honey.

Equipment

  • Juicer – my juicer is super old and broken but it does the job. If you don’t have one you can use a food processor to blend the grapes and strain the juice through a cheesecloth or a fine mesh strainer.
  • A small pot – any pot you have will do the job
  • Serving bowls – use any bowls you have and like. Mine were similar to these.
  • Ladle – any heat resistant ladle will do.

Helpful tips for the best grape pudding

  • No juicer? No problem. Use a food processor to blend the grapes after you remove the stems. Strain the mixture through a cheesecloth or a fine mesh strainer to extract the juice.
  • Remove the foam that forms ot tom of the grape juice. This will give you a smoother texture.
  • Cook the pudding on low heat. Let the grape juice barely simmer before you add the cornstarch slurry. Stir constantly until the pudding thickens. It is ready when it coats the back of a spoon.
  • Add the walnuts and raisins at the end. Once the pudding thickens, stir in the walnuts and raisins. Remove the pot from the heat right away. No extra cooking needed.
  • Adjust servings by bowl size. This recipe makes about 4 to 8 servings, depending on the size of the bowls you use.
  • Chill before serving. Refrigerate the pudding for at least 2 hours. For the best texture, chill it overnight.

Storing and serving

Store the grape pudding in individual serving bowls in the refrigerator. It keeps well for 3 to 4 days, although it rarely lasts that long in my house, because I eat it all. Serve it cold, straight from the fridge. I often enjoy it just as it is, directly from the bowl.

For extra flavor, add more chopped walnuts or a light sprinkle of cinnamon. For a more elegant presentation, you can unmold the pudding onto a plate and top it with walnuts, as shown in the photos.
