Easy Mediterranean Flatbread with Hummus and Vegetables

This easy Mediterranean flatbread recipe will take you less than ten minutes to prepare. All you need to do is to plan ahead and make some homemade beet hummus. You can also use store-bought if you have a favorite brand. To prepare this delicious meal you have to spread some hummus on a flatbread and top with your favorite vegetables. It is so easy than even a child can do it.

You can serve this Mediterranean flatbread for any meal of the day. It is great for a busy or lazy days. When you don’t feel like cooking, or you don’t have time to cook you can assemble this meal in no time.

Why should you make this Mediterranean Flatbread

Most people assume that eating healthy requires a lot of effort and time. In reality you can serve highly nutritious meals to your loved ones faster than ordering takeout. It is so easy to spread your favorite hummus on a flatbread and top it with your favorite vegetables.

This recipe is a complete meal. It provides a serving of complex carbohydrates, vegetables, protein, healthy fats and dairy. It is also highly nutritious and heart healthy. Hummus and feta are high in protein. While the whole grains and vegetables provide essential vitamins, minerals and fiber. Complex carbohydrates, like beans and whole grains, may satiate your hunger and keep you full for longer compared to simple carbohydrates.

For this recipe I prepared my own red beet hummus. When you make hummus at home you know exactly what you put in it. Store-bought hummus often contains unnecessary ingredients like sugar, corn syrup, stabilizers, artificial flavors, and preserves. Very often the hummus we find in the grocery store contains inferior quantity oils like canola, peanut or sunflower. A good quality hummus is always made with extra virgin olive oil. That is a law!!!

Helpful tips

You customize the recipe the way you want it. I haven’t listed amounts of most of the ingredients intentionally. Please use your own taste preference when you prepare any of my recipes.

You can also make as many servings as you need.

What type of bread should you use?

I used whole wheat pita bread with minimal ingredients. You can use any flatbread you like.

What feta should you use?

I prefer to use cow feta in brineThis is my favorite type of feta because it is creamy and milder in taste. Unfortunately, it is not easy to find. I buy it from an international store, or I order it online. You can use whatever feta you have and like. I don’t recommend using feta that is already crumbled, because it has additives and anti-caking agents.

Food safety

I don’t recommend storing any leftover flatbread once it is topped with hummus and vegetables. The vegetables have a high-water content. The flatbread will absorb the water and become soggy. It is best if you serve and consume this meal as soon a s you prepare it.

Ingredients

  • 1 whole wheat pita bread or other flatbread
  • 2 -3 Tbsp red beetroot hummus or hummus that you prefer
  • mixed greens to taste
  • 1 mini seedless cucumber
  • cherry tomatoes or small Campari tomatoes
  • thinly sliced red onion to taste
  • sliced pitted olives to taste
  • feta to taste

Optional toppings

  • balsamic glaze, olive oil

Instructions

  • Wash the greens, tomatoes and cucumber. Peel the onion.
  • Slice the cucumber to rounds and some onion thinly. If needed cut the tomatoes in halves or quarters.
  • Spread some hummus on the flatbread and top with the mixed greens. Then add the rest of the toppings (tomatoes, cucumbers, onion, feta and olives).
  • If you want add balsamic glaze, a drizzle of olive oil or salt and pepper. Serve and consume right away.
