Where to find chipotle salsa? I love chipotle salsa and I always have it in my pantry. You can find it at the ethnic section of any Walmart, Target or other big grocery store. Usually, I buy the San Marcos chipotle salsa. When I take the amount that I need for the recipe I pour the remaining salsa in a jar with a lid and store it in the fridge for a week. This product doesn’t last very long in our home. I use it to prepare the chipotle sour cream for my chicken fajita lettuce cups. I also use it for my favorite chipotle mayonnaise.

To make this recipe more heart healthy use canned beans with low sodium content.

Substitutions. I am one of those people who doesn’t like the taste of cilantro. So, don’t look for a recipe with that fresh herb on my blog. If you prefer to use cilantro instead of parsley you are more than welcome to do that. You can also use whatever beans you have and like.

I hate to chop garlic finely. Therefore, I use a garlic press for most of my recipes. I prefer to add pressed garlic to the food processor to make sure there are no big pieces of garlic left. It is not very pleasant to chew on some garlic while you are enjoying your dip.

Ingredients

  • 1 can red beans drained and rinsed
  • 1 lime juice and zest
  • 1 Tbsp chipotle salsa I use San Marcos
  • 1 garlic clove minced or pressed
  • 1 Tbsp extra virgin olive oil
  • ¼ cup fresh parsley leaves or cilantro if you prefer
  • salt and pepper to taste

Instructions

  • Open a can of red beans, drain and rinse them well.
  • Then add them to a food processor along with the other ingredients. Mix/process until you are happy with the consistency. I like mine very smooth.

  • Serve it drizzled with extra virgin olive oil, some chopped parsley and jalapeño (optional). Dip your favorite chips or vegetables.
