Easy Soda Bread Rolls With Olives and Feta

Can you have delicious homemade bread rolls ready in just 30 minutes? The answer is yes. You can make these easy soda bread rolls with olives and feta with only 10 minutes of work. The oven will do the rest.
During my childhood my mom often made soda bread rolls with yogurt and feta for breakfast. She served them with some tea, and we ate them while they were still warm. I still remember the fights between my brother and I over the last bread roll.

Why should you make them?
The answer is in the title. They are easy and tasty. Your only job is to dump the ingredients in a bowl and stir until they are combined. No need to knead or proof. The baking soda is activated in the yogurt and you can bake them right after you’ve combined all the ingredients.
There is whole wheat flour in the ingredients, which makes them higher in nutrients. Whole wheat flour can provide you with more fiber and B vitamins than all-purpose flour.
The easy soda bread rolls with olives and feta are also suitable for kids and could be packed in a lunch box.

Helpful tips
Make sure that the baking soda you use is fresh. If it is old your bread will turn out flat.
Crumble your own feta. Buy the feta on a block and use a fork or your fingers to crumble it. I don’t recommend using already crumbled feta, because it contains starches and anti-caking agents.
The dough is very sticky, and I use an ice cream scoop to form the bead rolls. If you decide to use your hands for shaping them, you have to oil your palms first with some olive oil.
Store leftovers in the fridge. I don’t recommend keeping any leftover bread rolls on the countertop. They contain feta witch spoils easily. For best taste reheat them after you removed them from the refrigerator.
Easy Soda Bread Rolls With Olives and Feta
Ingredients
- 1 large egg
- 1 cup Plain or Greek yogurt whole
- 1 tsp baking soda
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 tsp baking powder
- 2 tsp dried oregano
- 1 tsp garlic powder
- ½ cup sliced olives Kalamata or black
- ½ cup crumbled feta cheese
- olive oil for drizzling
Instructions
- Preheat the oven to 355F and line a baking sheet with parchment paper.
- Crack the egg in a bowl. Then add the yogurt and the baking soda. Stir well.
- In another bowl combine the dry ingredients (one cup of white and one cup of whole wheat flour, baking powder, oregano and garlic powder).
- Add the dry ingredients to the bowl with the egg and yogurt. Stir until combined.
- Finally add the crumbled feta and sliced olives. Stir again until you end up with a sticky dough.
- Use an ice cream scoop to form 12 bread rolls and place them on a baking sheet. Drizzle them with olive oil.
- Bake for 15-20 minutes or until they are golden brown. Cool them on a cooling rack.
