Helpful tips

Remove the pits from the dates – Always check and remove all pits before blending to protect your food processor.

Blend to your preferred texture – Process the mixture until it reaches the consistency you like. Blend longer for a smoother texture or pulse briefly if you prefer chunkier strawberry chocolates.

Make evenly sized balls – For a neat and uniform look, use a measuring tablespoon to scoop the mixture before rolling. Even sizes also help the chocolates chill and set evenly.

Melt the chocolate gently –
You can melt the chocolate using one of these methods:

  • Double boiler: Place the chocolate in a heatproof bowl over a pot of gently simmering water. Stir until smooth.
  • Microwave: Heat the chocolate in short 20–30 second intervals, stirring between each round to prevent overheating.

Chill before serving – Refrigerate the strawberry chocolates before serving to help them keep their shape and prevent the chocolate coating from melting.
