I’m obsessed with peanut butter. It is one of my favorite foods that I love to add to both sweet and savory recipes. I’ve created the recipe for the five ingredient peanut butter waffles after a workout. While I was working out, I was craving a breakfast that contains peanut butter. Since I have an experience baking and cooking with nut butters, I quickly created the recipe for the peanut butter waffles. They were so tasty that I had to share them with you.

Why should you make this recipe?

These waffles are so delicious, and they are the perfect recovery meal. They are high in protein and low on sugar. I make them when I need something to pick me up after a heavy workout. You can easily eat them without any toppings, syrup or spread. For the pictures I made a topping of peanut butter, maple syrup and some cacao powder. It looks like a chocolate but it is not.

These waffles are ready in just 15 minutes and are supper easy to make.

The recipe is gluten and grain free, but the texture is very similar to those made with flour. They are good for those who avoid eating grains and gluten for health or other reasons.

The five ingredient peanut butter waffles are also dairy free. I personally have lactose intolerance but that never stopped me from eating dairy. If you avoid milk and milk products this recipe is suitable for you.

The waffles are sweetened with maple syrup. This makes them suitable for diabetics. Maple syrup is a natural sweetener that is less processed and has a lower glycemic index than sugar.

Helpful tips

When you shop for peanut butter make sure that the only ingredients in it are peanuts and salt. For this recipe it is best if you use creamy peanut butter, not chunky.

You can replace the nonstick spray with oil. Use a silicone brush to grease your waffle maker.

You can make the batter by hand using a whisk, but it might be a bit challenging since peanut butter is thick.

If you decide to try these waffles you should know that they are very small batch. When I made them I had only three waffles, but it depends on the waffle maker.

Equipment

  • stand or hand mixer, waffle maker

Ingredients

  • 3 large eggs
  • ½ cup peanut butter creamy, no sugar added
  • ¼ cup maple syrup honey works too
  • ½ tsp baking powder
  • nonstick cooking spray

Instructions

  • Preheat a waffle maker
  • Beat the eggs and the peanut butter on high speed with a stand or hand mixer until smooth. Then stop the beaters and add the maple syrup and baking powder. Beat again until all the ingredients are combined.
  • Spray your waffle maker with nonstick cooking spray. Use a ladle to scoop some of the mixture. Cook according to your waffle maker manufacture's directions.
  • Serve with toppings that you like.
