Flourless Banana Peanut Butter Muffins (Gluten and Grain Free)

These flourless banana peanut butter muffins are the prefect guilt free treat. They are grain and refined sugar free. I make them at least once a month. They are perfect for breakfast, snack, desert or packed in a lunch box.

Who doesn’t love this classic combination of banana and peanut butter? This recipe can certainly satisfy your sweet tooth without causing you diabetes. It is high in protein and low in sugar. The high amount of protein will keep you satiated for longer and will keep your blood glucose levels stable. These muffins are sweetened only with the ripe bananas and sugar free chocolate chip. I use chocolate chip from Choc Zero that is sweetened with monk fruit. You can use dark or semi-sweet chocolate chip too. The amount of sugar per serving will still remain insignificant. The texture of these muffins is very close to the ones made with flour. Therefore, you will enjoy them just as much.

The flourless, banana, peanut butter muffins are good for people who like sweet treats, but avoid refined flour and sugar. Diabetics, or people with gluten intolerance would appreciate this recipe. Kids also love them. I serve them when my daughter invites friends over. They are always a hit. I also pack them in her lunch box as a sweet treat.
Substitutions.
The peanut butter in this recipe can be substituted with almond butter. To make the muffins nut free you can also use sun butter (made from sunflower seeds). Instead of chocolate chip you can add berries or jam. This modification can make them Paleo. With added jam they taste exactly like peanut butter and jelly, which is another classic flavor combination.

Food Safety.
I store them in the refrigerator, in a sealed container. They are best if eaten in 5-7 days. If you keep the muffins at room temperature they will get moldy fast.

Flourless Banana Peanut Butter Muffins
Ingredients
- 1 cup mashed bananas (about 2-3 very ripe bananas)
- 1 cup peanut butter
- 3 eggs
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 cup chocolate chip I used Choc Zero
- nonstick spray
Instructions
- Preheat the oven to 350F.
- Line your muffin pan with paper liners and spray them with nonstick spray.
- In a big bowl stir the mashed bananas, the peanut butter, the eggs, the vanilla and the baking powder.
- Once combined add half of the chocolate chips to the mixture. Save the other half to put on top of each muffin.
- Scoop about ¼ cup of the mixture into each muffin liner.
- Add the rest of the chocolate chip as you spread it evenly among the muffins.
- Bake for 20 minutes at 350F. The muffins should be solid to the touch. Bake more if the center of the muffin is still runny.
- Allow 10 minutes of cooling before removing them from the pan.
- Once they are completely cooled down put them in a sealed box and store them in the refrigerator.
