Greek Lamb Burgers with Whipped Feta Sauce

I love to prepare these Greek lamb burgers. They are so juicy and flavorful. I serve them with an amazing, creamy whipped feta sauce. This classic Mediterranean combination between the lamb, feta, yogurt and mint, is my favorite. I love it so much that I have another similar recipe on my blog, but it is for lamb chops.

Where to buy ground lamb?
There is nothing better than the taste of pasture raised lamb. It is tender, flavorful and juicy. I know that it is hard to find grass-fed lamb at regular grocery stores. Helpful tips
This recipe makes two Greek lamb burgers.
Cooking time might differ depending on the thickens of your hamburger patties. You can use a food thermometer to make sure that your lamb is cooked. Insert the thermometer in the middle of the burger patty and cook until when it reads F150.
It is very important to rest your meat after cooking. I usually rest my burgers on a cooling rack for 8-10 minutes before serving them.

Helpful tips for making the feta sauce
You are going to need a high-speed blender or food processor to make the whipped feta sauce. To get the right consistency you might have to add some more yogurt to thin it out. It depends on how dry the feta is. The sauce should be thick but pourable. I don’t add salt because the feta is salty, but you might add some pepper if you like.
I prefer to use cow feta in brine. This is my favorite type of feta because it is creamy and milder in taste. Unfortunately, it is not easy to find. I buy it from an international store, or I order it online. You can use whatever feta you have and like. I don’t recommend using feta that is already crumbled, because it has additives and anti-caking agents.
Greek Lamb Burgers with Whipped Feta Sauce
Ingredients
For the whipped feta sauce
- 6 oz feta cheese I use cow feta in brine
- ¼ cup fresh mint leaves
- 2 Tbsp Plain or Greek yogurt whole
For the burgers
- 1 lb ground lamb meat
- salt and pepper to taste
- 2 Hamburger buns
- thinly sliced red onion
- thinly sliced tomato
- thinly sliced cucumber
Instructions
To prepare the whipped feta sauce
- To make the sauce add the feta, mint and yogurt in a high speed blender or food processor. Blend until smooth and transfer into a bowl.
To prepare the burgers
- Preheat a grill or cast iron pan to high.
- From the ground lamb form two 8 oz burger patties. Season them with salt and pepper on both sides.
- Grill for about 4 minutes per side (depending on the desired temperature).
- Transfer the cooked lamb patties to a cooling rack and rest them for 10 minutes.
- While the lamb burgers rest use a mandolin to slice thinly the red onion, cucumber and tomato. The amount depends on your preference.
To assemble the burgers
- Slice two hamburger buns in half. Add sauce and onion on the bottom half of the bun. Then add the lamb patty. Pour some more sauce over the meat and top with thinly sliced tomatoes, onions and cucumbers. Finally place the top half of the bun on top. Enjoy right away.
