Gut Healing Frozen Bites with Mango Kefir and Collagen

These gut healing, frozen bites are the perfect snack for the hot summer days. They are delicious and so easy to prepare. The bites contain essential ingredients for a healthy digestive tract. You need only four tasty and gut friendly ingredients to prepare these frozen bites. All of them can help you maintain a healthy digestive system.

*Mango is rich in digestive enzymes and fiber that can help with healthy digestion. It also contains many antioxidants and vitamins that can protect form aging and inflammation in the body.

Helpful tips
How to melt chocolate?
I usually create a water bath to melt the chocolate. This means that I put a pot of simmering water underneath the bowl with the chocolate and I stir until it is melted. If the water in the water bath is boiling it might ruin the chocolate.
You can also melt the chocolate in the microwave. Put your chocolate in a microwave safe bowl and heat it for about a minute on high. Stop the microwave and stir it occasionally (every 15 seconds) so it doesn’t burn.

Other helpful tips
I used unsweetened and whole kefir for this recipe. I don’t buy and use any low-fat dairy myself, so you won’t see me using it in my recipes.
It is very important to use unflavored and unsweetened collagen peptides. I prefer using Vital Proteins, but you can use any brand that you like.
You are going to need a blender or a smoothie maker for this recipe. Make sure that the mixture is well blended before transferring it in the molds.
If you don’t have chocolate molds you can use ice-cube trays. Another option is to pour the mixture on a baking sheet and freeze it. Then use a knife to cut it to bite-sized pieces.

Equipment
- High power blender or smoothie maker
Ingredients
- 1 ripe mango peeled, cubed
- 1 cup kefir whole, plain, unsweetened
- 2 Tbsp unflavored collagen peptides
- 4 oz white chocolate chips 1/2 cup, I used sugar free from Choc Zero
Instructions
- Melt the chocolate chips.
- In a blender or a smoothie maker add the mango, kefir, collagen and the melted chocolate. Blend until the mixture is smooth.
- Fill chocolate molds or ice cube trays with the mixture and freeze for at least an hour before serving.
