How to Make Homemade Hot Dog Buns

These homemade hot dog buns are a game changer for summer cookouts, picnics, and family dinners. They’re made with simple pantry ingredients and have a light, pillowy texture that’s perfect for holding your favorite hot dogs, sausages, or grilled veggies. Unlike store-bought buns, these are fresh, flavorful, and easy to customize in shape and size. Once you try making your own, you’ll never go back to the plastic bag kind again.

Why to Bake Your Own Hot Dog Buns?

While store-bought buns are convenient, they often contain a long list of preservatives, artificial flavors, and dough conditioners to extend shelf life. If you’ve ever read the ingredient label, it can be a little alarming. Many commercial buns also include unnecessary amounts of sugar — sometimes several teaspoons per bun.

In this homemade version, I use just a teaspoon of sugar, simply to activate the yeast. That’s it. No additives, no strange aftertaste — just real ingredients and soft, flavorful bread you can feel good about serving. Plus, nothing beats the smell of freshly baked buns coming out of the oven. Once you try these, it’s hard to go back.

1. Choosing the Right Yeast

  • Fresh Yeast: Less common, but used in professional bakeries. Requires refrigeration and must be crumbled into the dough.
  • Active Dry Yeast: This is the most common type for homemade bread. It needs to be dissolved in warm water (bloomed) before using.
  • Instant Yeast (Rapid Rise): This yeast can be mixed directly with dry ingredients without blooming. It rises a little faster than active dry yeast.

2. Blooming the Yeast

  • For Active Dry Yeast: Always bloom it first to ensure it’s still alive and active.
    • Dissolve 1 tablespoon of yeast in a cup of warm water or milk (100°F – 110°F / 38°C – 43°C) with a teaspoon of sugar.
    • Let it sit for about 5-10 minutes until it becomes foamy.
  • Instant Yeast: No need to bloom; it can go straight into the dry ingredients.

3. Liquid Ingredients Temperature

  • Ideal Temperature: 100°F – 110°F (38°C – 43°C) for activating yeast.
  • Too Hot: Above 120°F (49°C) can kill the yeast, leading to no rise.
  • Too Cold: Below 95°F (35°C) will slow the yeast down, affecting the rise.

4. When to Add Salt

  • Don’t add salt directly to the yeast mixture: Salt can inhibit yeast growth if added too early.
  • Mix it with the flour: Add salt to the flour before combining it with the yeast mixture to avoid direct contact with yeast.

5. Choosing the Best Flour

  • All-Purpose Flour: Works well for most bread recipes. It has a moderate protein content (around 10-12%) which gives bread a nice texture.
  • Bread Flour: Has higher protein (12-14%) and helps create a chewy, structured loaf. Great for rustic breads, pizza dough, and artisan loaves. I like to use King Arthur for most of my recipes.

6. How Much Flour to Add

  • General Rule: Start with about 2 cups of flour.
    • Add flour gradually: Flour can absorb water differently depending on humidity, brand, and type. Use just enough to form a dough that’s smooth, slightly tacky but not sticky.

Proofing and Baking tips

  • Proofing: Allow the dough to proof for 45 to 60 minutes directly in the mixing bowl, covered with a towel or plastic wrap. Proof again after shaping for 30 minutes.
  • Avoid Drafts: Keep the dough away from vents and drafts to prevent deflation due to rapid temperature changes.
  • Baking Time: Baking times can vary depending on the size of the buns, your oven, and altitude. Check the buns after 20 minutes of baking. Total baking time should be around 25-30 minutes. Please, use your own judgment when baking anything. Don’t rely blindly on the baking times provided in the recipe.

Serving and Storing Hot Dog buns

These homemade hot dog buns are best enjoyed fresh on the day they’re baked — soft, fluffy, and slightly warm. You can serve them with classic grilled hot dogs, sausages, veggie dogs, or even use them for sandwiches.

To store, let the buns cool down completely, then place them in a paper bag or a bread box. They’ll stay soft at room temperature for up to 2 days. You can also freeze them for longer storage. Just thaw at room temp and warm them slightly before serving to bring back that fresh-baked texture.

Servings: 8

Equipment

  • Stand mixer optional

Ingredients

  • ½ cup lukewarm water
  • ½ cup whole milk lukewarm
  • 1 tsp sugar
  • 2 ¼ tsps active dry yeast or one 7 gram packet
  • 2 ½ cups bread flour or high-protein all-purpose flour
  • 1 tsp salt
  • more milk for brushing on top

Instructions

To prepare the dough

  • Add the slightly warm milk and water in a deep bowl. Then add the sugar and yeast.
If you use active dry yeast stir and wait for 5 minutes before adding the flour. If you use instant yeast you can add the flour right away.

  • Add two cups of flour and the salt to the mixing bowl.
  • Start mixing on the lowest possible speed until you have a wet dough.
If you don't have a mixer, use a large spoon to stir until you have a sticky dough.
  • Keep adding flour gradually and continue mixing until you have a soft and stretchy dough. In total you might have to add two and a half or three cups of flour (depending on the brand).
If you are making the dough by hand, transfer it on a floured surface and knead.
  • Once all the flour is incorporated and you have a dough that doesn’t stick to the sides of the bowl and to your fingers it is ready to proof.
  • Leave the dough in the mixing bowl, cover it with a clean towel or a plastic wrap and leave it in for an hour to proof.

To shape the hot dog buns

  • Once the dough is doubled in size punch it down to release the air and turn it out onto a floured surface. Divide the dough into 8 equal pieces.
  • Roll each piece and use your hands to shape it into a rope. All the dough ropes should be about 6 inches long and similar size. They should be much thinner than the final hot dog bun, because they are going to expand as they proofs and bake.

  • Preheat the oven to 400℉. Bake the hot dog buns for 20-30 minutes or until golden brown.
  • Cool them on a wire rack.
