Mediterranean Grilled Eggplant with Tomatoes and Feta

The idea for the Mediterranean grilled eggplant with tomatoes and feta came to me in the pick of the summer. I was craving a Greek salad or an appetizer with an eggplant and I decided to visit the farmer’s market for inspiration. When I came home, I had all the ingredients I needed to make a tasty Mediterranean salad or appetizer. I bought an eggplant, some cherry tomatoes and green onions. I knew that I have feta cheese in the fridge, because we are Bulgarians and we have to have feta with every meal. Also, I never run out of olives. They are one of my favorite foods. I grow fresh herbs in a small garden in my back yard. It is so convenient to pick only the amount of herbs you need. I have a lot of basil, oregano, mint, dill and chives.

So, when I gathered all the ingredients I needed for the appetizer, I started thinking about how to combine them all. I love to grill vegetables during the summer, so I decided to grill some eggplant slices and top them with cherry tomatoes, feta, green onions and olives. That was a perfect combination and it was exactly what I was craving at this moment. The recipe turned out so good that I had to share it with you. It is so easy to make, and it takes only 30 minutes of your time. You can serve it as an appetizer, side dish or a salad.

Mediterranean Grilled Eggplant with Tomatoes and Feta
Ingredients
- 1 eggplant
- 2 Tbsp extra virgin olive oil
- 1 cup cherry tomatoes cut in half
- ⅓ cup chopped olives pitted
- 1 Tbsp chopped fresh basil leaves
- ½ Tbsp chopped fresh oregano
- ⅓ cup crumbled feta cheese
- ⅓ cup chopped green onions white and green parts
- salt and pepper to taste
Instructions
- Preheat a grill or a grill pan to a medium high.
- Wash the eggplant and slice it to ½ inch thick rounds.
- Place the eggplant slices on a large plate and sprinkle some salt on them. Then drizzle them with olive oil and place them on the hot grill. Cook for 3-4 minutes per side. Remove the slices form the grill and place them on a plate.
- While the eggplant slices cool down chop the green onions, herbs, olives and slice the cherry tomatoes in half. Add the tomatoes, olives, green onions, herbs, about a tablespoon of olive oil and some salt to the bowl and stir carefully.
- Top the grilled eggplant slices with the tomato mixture and crumble the feta on top. Serve right away.
