Helpful Tips
- Salt the pasta water generously – This is the best way to season the orzo and build flavor from the beginning.
- Rinse the cooked orzo with cold water – This stops the cooking process and cools the pasta quickly for the salad.
- Make the dressing in the bottom of the bowl – No need to wash an extra jar or bowl. Everything comes together in one large mixing bowl.
- Add the red onion to the dressing first – The onion absorbs the dressing and becomes slightly marinated while you prepare the rest of the ingredients.
- Flake the tuna with a fork – This helps distribute the tuna evenly so you get some in every bite.
- Season carefully at first – Olives, tuna and artichokes can already contain a good amount of salt. Taste the salad before adding more.
- Squeeze excess liquid from the artichokes – This keeps the salad from becoming watery and prevents the dressing from getting diluted.
- Adjust the dressing to your taste – Add more lemon juice for brightness or more olive oil for a richer flavor.
- Let the salad chill before serving – A little time in the fridge helps the Mediterranean flavors combine and deepen even more.

Serving and Storage Instructions
Serve this Mediterranean orzo salad right away or chill it in the fridge for a few hours before serving. The longer the salad chills, the deeper and more flavorful it becomes. The pasta and vegetables absorb the lemon dressing beautifully over time.
This salad is perfect for family gatherings, potlucks, picnics or easy lunches throughout the week. It is also great for meal prep because the flavors continue to develop in the fridge.
Store leftovers in an airtight food-safe container in the refrigerator for 2–3 days. You can store it a little longer, but the cherry tomatoes and bell peppers may start to lose freshness and release extra moisture.
I do not recommend freezing this Mediterranean tuna orzo salad. Fresh tomatoes do not freeze well and tend to burst and become watery after thawing.
