How to Make Mini Banitsa Pastries? Traditional Bulgarian Recipe

These mini banitsa pastries are a variation of one of the most popular Bulgarian recipes. Banitsa has a golden, crunchy crust and a soft, airy center. It is a flaky phyllo pastry filled with eggs, yogurt, and feta cheese. Bulgarians serve it for any meal: breakfast, lunch, dinner and snack. We also prepare it with or without occasion. Every family have their preferred recipes, but traditionally banitsa it is baked in a large round pan. In my family, the end pieces with more crust are the best part. These mini banitsa pastries are baked in a muffin tin. That way, every piece has extra buttery crunch in every bite. Just the way we like it.

Banitsa is more than just food—it’s tradition. In Bulgaria, we make it for New Year’s Day with hidden fortunes or a coin inside. Each person picks a piece to see what the year will bring. Common fortunes promise love, health, or prosperity. My mini banitsa pastries have all the taste of the classic recipe in a fun, bite-sized shape. You only need phyllo dough, feta, eggs, yogurt, butter, and club soda. The smaller size makes them perfect for parties, lunch boxes, brunch, or an easy breakfast.

Ingredients for Mini Banitsa Pastries

  • Eggs – I use large, pasture raised eggs for
  • Feta cheese – you can find it in every grocery store. Pick feta in brine for this recipe.
  • Phyllo dough – it is usually in the freezer section right next to the puff pastry or pie crusts.
  • Melted butter (or oil) – I use European brands of butter. My favorite brand is Kerrygold.
  • Plain or Greek yogurt – make sure that there is no flavor or sugar added to it. I use homemade yogurt.
  • Club soda (unflavored carbonated water) – any brand of club soda will do. Read the label to make sure there is no sugar in the ingredients. The only ingredient should be carbonated water.

Equipment for the mini banitsa pastries

  • Food-safe silicone brush – it is affordable kitchen gadget that I often use in my baking recipes. Perfect for brushing melted butter or egg wash on pastries.
  • Measuring cups – there are measuring pitchers for liquids and measuring cups and spoons for the dry ingredients. For this recipes you only need to measure the liquid ingredients.
  • Large mixing bowl – any large bowl will do. Mine was bought from a Home goods store, but here is a similar one.
  • Two muffin tins – these are my favorite ceramic muffin tins. You can use any brand that you like, just make sure that you brush them with butter very well before baking.
  • Oven-safe mitts – they are a necessity for any baker. I have two pairs that I use to protect my hands from the hot temperatures.
  • Large wire cooling rack – this recipe makes 24 pastries, so you might need either two small cooling racks or one big one.

Baking time can vary based on your oven or personal preference. I like to bake mine a bit longer for extra crunchiness.

There is no perfect way to tear the phyllo dough. Just tear pieces and place them in the muffin tin nests.

When adding the egg and feta mixture, don’t use too much or too little. Too much makes the pastry soggy. Too little makes it dry.

You might have extra phyllo dough or filling. This depends on how full you make each muffin nest.
