Mint Smoothie Bowl with Chocolate Magic Shell (No Dyes)

The recipe for the mint smoothie bowl with chocolate magic shell came to me in a dream. Yes, it might sound strange, but it is true. I was dreaming about an amazing, healthy breakfast with mint and chocolate. The moment I woke up I had to write down everything I remember. Then I started working on the recipe. I was very happy how it turned out. It was so delicious that I couldn’t wait to share it with you.

This recipe doesn’t have any artificial flavors or colors. The green color comes from the fruits, vegetables, and herbs I’ve used as ingredients. The mint flavor is coming from actual mint leaves and it tastes so refreshing during the summer.
The smoothie is sweetened with fruit, and it doesn’t contain refined sugar. The chocolate may contain some sugar depending on what type or brand you choose. I like to use Choc Zero, which is sweetened with monk fruit, and it has no effect on the blood glucose.

Helpful tips about making the mint smoothie bowl
You need a powerful blender and patience. You might feel tempted to add water or milk to the mixture, but don’t do it. That is going to ruin the texture and consistency of the smoothie bowl. We are looking for a soft serve consistency. Start by pulsing the ingredients a few times and stir between each cycle. I have a smoothie program on my blender, which is powerful enough to blend the ingredients together.
Use frozen fruit and vegetables for this recipe. Fresh fruits and vegetables won’t create the thickness that we are looking for.

I have spearmint and peppermint in my garden so I used a mixture of both. You can find fresh mint at any grocery store.
As soon as your smoothie is ready transfer it in a bowl and apply a thin layer of the chocolate on top. You must be fast because it hardens instantly.
If you want to make this recipe vegan use chocolate that doesn’t contain dairy. There are many options in the grocery stores.
You can choose toppings you like for this recipe. I had coconut chips and cacao nibs and that is what I used.
Serve and consume right away. Don’t store leftovers.

Mint Smoothie Bowl with Chocolate Magic Shell
Ingredients
For the smoothie bowl
- 1 cup frozen mango
- ½ cup frozen avocado
- ½ frozen banana
- 1 cup fresh baby spinach
- ½ cup fresh mint leaves
- 2 pitted dates or maple syrup to taste
- 4 oz coconut milk from a can
For the magic shell
- 4 oz chocolate chips of choice
- 1 tsp coconut oil
Toppings (optional)
- coconut chips
- cacao nibs
- chocolate chips of choice
Instructions
- Add the chocolate chip in a microwave safe bowl. Melt it for a minute in the microwave. Add the coconut oil to the melted chocolate and stir well.
- Add all the ingredients for the smoothie bowl in a powerful blender and blend until smooth and creamy. The consistency should me more like a slightly melted ice cream than a smoothie. Transfer the the mixture to a bowl.
- Spread a thin layer of the melted chocolate over the smoothie. You have to be fast because it hardens fast.
- Serve with toppings that you like and enjoy while it is cold.
