No Cook Mediterranean Pocket Sandwiches with a Special Sauce

These no cook Mediterranean pocket sandwiches are the perfect quick meal for the hot summer days. They are stuffed with your favorite vegetables, some Prosciutto and finished with a drizzle of a special sauce. These sandwiches are not only delicious but also very nutritious. Packed with healthy ingredients they will satisfy your hunger and nourish your body at the same time.

These no cook Mediterranean pocket sandwiches are so easy to make. They don’t require any cooking or advanced skills.
This recipe is very nutritious. It contains six different vegetables, complex carbohydrates, dairy and protein.
The best thing about this recipe is the sauce. It comes together in no time and it is so addictive. To make it you are going to need a fire roasted pepper from a jar, some feta, yogurt and olive oil. Blend everything together and drizzle it all over the sandwich. The sauce goes so well with all the Mediterranean ingredients.

Helpful tips
You are going to need a high-speed blender or food processor to make the special feta sauce. To get the right consistency you might have to add some more yogurt to thin it out. It depends on how dry the feta is. The sauce should be thick but pourable. I don’t add salt because the feta is salty, but you might add some pepper if you like.
If I eat feta I prefer to buy cow feta in brine. This is my favorite type of feta because it is creamy and milder in taste. Unfortunately, it is not easy to find. I buy it from an international store, or I order it online. You can use whatever feta you have and like. I don’t recommend using feta that is already crumbled, because it has additives and anti-caking agents. This might change the texture of the sauce.

Other tips
You can make as many servings as you want. The sauce will be enough for two more sandwiches. I made only two sandwiches because only my husband and I were home.
I used a mandoline slicer to cut the cucumbers and onion thinly. That is totally optional. You can slice your vegetables with a knife.
I used whole wheat pita pockets and fire roasted peppers from Trader Joe’s. You can find Prosciutto in most stores. I got mine form Costco.

Equipment
- Food processor, blender
Ingredients
For the sauce
- 1 fire roasted bell pepper from a jar
- 4 oz feta cheese
- 1 Tbsp extra virgin olive oil
- 2 Tbsp Plain or Greek yogurt whole
For the sandwiches
- 1 whole wheat pita bread sliced in two
- 1 mini seedless cucumbers thinly sliced
- 1 Heirloom tomato thinly sliced
- 1 red onion thinly sliced
- 2 slices of Prosciutto
- baby arugula
- sliced black olives or olives you prefer
Instructions
To make the sauce
- Add the feta, one roasted red pepper, the yogurt and the olive oil in the food processor. Blend util smooth.
To make the sandwiches
- Slice one whole wheat pita bread in half and open the pocket. Add the sauce, Prosciutto, sliced tomato, cucumber, olives, arugula and top with some more sauce.
- Serve the sandwiches right away. Do not store leftovers.
