Ingredients for the Peanut Butter And Jelly Raspberries

These raspberry delights, stuffed with creamy peanut butter and dipped in luscious chocolate, offer a perfect balance of flavors and textures. Here’s what you need to make them:

  • Raspberries – choose large and ripe berries for the best flavor and easier stuffing. Mine were also organic, but that is optional.
  • Peanut Butter – when you shop for peanut butter make sure that the only ingredients in it are peanuts and salt. For this recipe it is best if you use creamy peanut butter, not chunky. It is much easier to stuff the raspberries with the creamy peanut butter.
  • Maple syrup – I add just a little bit of maple syrup to sweeten the peanut butter. You can replace it with honey or powdered sugar if you prefer.
  • Chocolate – you can use any chocolate you like for this recipe. I used milk, white and dark chocolate. If you want your peanut butter and jelly raspberries to be vegan use a vegan chocolate. HU is one of my favorite brands of vegan chocolate.,
  • Coconut oil – this helps to smooth out the chocolate and make it easier to dip. It also gives a nice shine on the chocolate raspberries.
  • Toppings – they are optional, but you can use your imagination to decorate the raspberries with whatever you want. In my opinion crushed nuts go very well with these chocolate bites.

How To Melt Chocolate?

1. Double Boiler Method

  • Add about 1-2 inches of water in a saucepan. Make sure the water doesn’t touch the bottom of the bowl when it’s placed on top.
  • Place the saucepan on the stove over medium heat and bring the water to a simmer.
  • Chop the chocolate into uniform pieces to ensure even melting. You can also use chocolate chips.
  • Set the heatproof bowl over the saucepan, creating a double boiler setup.
  • Stir the chocolate frequently as it begins to melt. Continue until the chocolate is completely smooth and glossy. You can add some coconut oil or butter for extra shine.
  • Once melted, remove the bowl from the saucepan. Be careful not to get any water into the chocolate, as it can ruin the chocolate.

2. Microwave Method

  • Place the chocolate chips or chopped chocolate in a microwave-safe bowl and heat in the microwave at 50% power for 30-second intervals.
  • Stir the chocolate after each interval to ensure even melting and to prevent burning.
  • Repeat the heating and stirring process until the chocolate is fully melted and smooth.

3. Direct Heat Method (Stovetop)

I don’t recommend this method because there is a high risk of burning the chocolate.

  • Use chocolate chips or chop the chocolate into small, even pieces.
  • Place the saucepan over low heat and add the chocolate pieces.
  • Stir continuously to prevent the chocolate from sticking to the bottom and burning.
  • Remove from heat as soon as the chocolate is nearly melted and continue stirring off the heat to finish melting.

Helpful Tips for making the Frozen Raspberries

  • Customize Your Fillings: Feel free to experiment with other nut or seed butters. You can also add a sprinkle of sea salt on top of the chocolate for a hint of contrast.
  • Add Some Crunch: If you like different textures, consider sprinkling some crushed nuts, colorful sprinkles or granola right after dipping the raspberries in chocolate.
  • Keep it cool: If you serve the stuffed raspberries for a party and you plan to keep them out for long you can serve them over ice. They are going to melt fast at room temperature

Storing leftover Peanut Butter And Jelly Frozen Raspberries

Store the finished raspberry bites in the freezer for up to a month. If you have leftover treats that have started to melt, place them on a sheet tray and freeze them again. Once they are solid you can transfer them in a freezer safe bag or container with lid. This method will prevent them from clumping to each other.

Ingredients

  • raspberries about half a pound
  • ½ cup creamy peanut butter no sugar added
  • 1 Tbsp maple syrup
  • 4 oz chocolate of choice I used milk, white and dark chocolate.
  • tsp coconut oil optional
  • crushed nuts for topping optional

Instructions

  • In a small bowl combine the peanut butter and the maple syrup and stir well.
  • Transfer the mixture in a piping bag with a fine tip. If you don't have one use a Ziplock bag. Transfer the mixture in the bag and cut a small piece of one edge.
  • Line a baking sheet or a tray with parchment paper.
  • Fill the raspberries just enough so that the peanut butter mixture is visible but not overflowing. Be careful not to break the raspberries.
Arrange the stuffed raspberries on the baking sheet. Leave some distance between them so they don't touch.
  • Freeze the raspberries for an hour or until they are frozen.
  • Melt the chocolate then add a teaspoon of coconut oil to it and stir. Cool of slightly. Read the blog post about tips and different ways to melt chocolate.
  • Use a spoon or a fork to dip the frozen raspberries in the melted chocolate. Allow any excess chocolate to drip off before placing the raspberry on a parchment-lined tray.

  • Serve right away or freeze again for later. Please read notes about storing leftovers.

Notes

I ended up with about 50 stuffed raspberries. You might have less or more depending on the size of the raspberries.
The serving size depends on the person. I think that 3-5 stuffed raspberries is a good serving size.
