Easy Raw Root Vegetable Salad With a Simple Vinaigrette

I make this raw root vegetable salad all winter long. It uses simple seasonal vegetables like carrots, beets, turnips, and radishes. The texture is so fresh and crunchy. The vinaigrette comes together in minutes and adds a bright, tangy bite. The vegetables taste naturally sweet and earthy in contrast with the tangy dressing. The vibrant color alone makes you want to dig in.

Why You’ll Love This Raw Root Vegetable Salad
Easy and fast
This salad comes together in about 10 minutes. Wash, peel, and shred the vegetables, then toss them with the vinaigrette. A food processor or salad shooter makes prep even faster.
Affordable, everyday ingredients
You can find all the ingredients at any grocery store. I love buying root vegetables at my local farmers’ market whenever possible. Seasonal produce tastes better, supports local growers, and often contains more fiber and antioxidants than out-of-season vegetables.
Fits many eating styles
This raw root vegetable salad is vegan, paleo-friendly, dairy-free, and gluten-free. It works well for heart-healthy and blood sugar–conscious meals.
Light and nourishing
Root vegetables provide fiber, vitamins, minerals, and antioxidants. Eating them raw keeps the texture crisp and preserves their natural freshness, all while keeping the salad low in calories.
Fresh, crunchy texture
The mix of shredded roots and sliced radish gives this salad a satisfying crunch that holds up even after tossing with the vinaigrette.

Equipment
- Box grater – to grate the vegetables.
- Food processor (optional) – if you don’t want to grate by hand.
- Salad shooter (optional)- this is my favorite grater/shredder. I love to use it to prepare this salad.
- Vegetable peeler – to peel the beet and carrots.
- Knife – to trim the ends of the vegetables.
- Cutting board – to trim the ends of the vegetables.

Helpful tips
- Wash and prep thoroughly
Scrub the root vegetables well. Trim any bruised spots. Peel the carrots and beet before grating.
- Protect your hands from beet stains
Raw beetroot can stain skin. Use food-grade gloves if you want to keep your fingers from turning pink.
- Use the right grating tool
A food processor or salad shooter makes prep fast and uniform. A box grater works just as well—use a hand guard or cut-resistant glove for safety.
- Adjust seasoning to taste
Start light on the salt, oil, and vinegar. Taste and adjust based on your preference or dietary needs.
- Swap the acid if needed
If you don’t enjoy vinegar, replace it with freshly squeezed lemon juice for a brighter, milder flavor.

Substitutions & Add-Ins
Change the oil
Use avocado oil, walnut oil, or another mild-flavored oil instead of olive oil.
Use a different dressing
This salad works well with any light vinaigrette you enjoy. A lemon-based dressing or a simple mustard vinaigrette also pair nicely with raw root vegetables.
Add more crunch
Shredded green cabbage or thinly sliced fennel blend well with the root vegetables and add extra texture.
Add natural sweetness
A grated or julienned green apple brightens the salad and balances the earthy flavors.
Top with cheese
Crumbled feta or goat cheese adds creaminess and a salty contrast.
Add nuts or seeds
Walnuts, pumpkin seeds, sunflower seeds, or sliced almonds bring extra crunch and healthy fats.
Add dried fruit
Raisins, dried cranberries, or chopped dried apricots add a touch of sweetness.
Fresh herbs
Parsley, dill, or chives add freshness without overpowering the salad.

Serving Suggestions
- Serve this raw root vegetable salad right after mixing for the best crunch and freshness.
- It works well as a light side dish for roasted meats, grilled fish, or plant-based mains.
- You can also enjoy it on its own as a quick lunch or add protein to make it more filling.

Storage
- Store leftovers in an airtight container in the refrigerator for up to 1–2 days.
- As it sits, the vegetables release some of their natural juices and soften slightly.
- The salad becomes lightly pickled from the vinaigrette, which deepens the flavor but reduces the crunch.
