Roasted Boneless Leg of Lamb with Vegetables: The Ultimate Holiday Meal

This roasted boneless leg of lamb with vegetables is not only delicious but also incredibly easy to prepare. It is ideal for the holiday season when you want a show-stopping meal without spending all day in the kitchen. It is also great if you are feeding a large family or group. The best part is that it’s more affordable than the pricier rack of lamb. The combination of garlic, lemon, and fresh herbs makes every bite taste like you’re dining at a fancy restaurant. Whether it’s for a festive gathering or a cozy family dinner, this recipe is a crowd-pleaser that will leave everyone asking for seconds!

The preparation method for this dish is as simple as it is effective. I started by preheating the oven and seasoned the boneless leg of lamb generously with salt and pepper. Then I made a mixture of olive oil, garlic, lemon, and fresh herbs. I rubbed the meat with the olive oil mixture. I used some kitchen twine to make sure it keeps its shape. Then I sliced some vegetables and I placed them on the bottom of a deep sheet pan. Next, I placed the lamb on a rack set on top of the vegetables, allowing the juices to drip down as the lamb roasted. The result is a perfectly roasted leg of lamb with a crispy exterior. This meal is simply irresistible paired with vegetables that are infused with all the lamb’s delicious drippings.

Ingredients:

  • Boneless leg of lamb: A tender and juicy cut of meat, perfect for roasting.
  • Olive oil: A rich, flavorful fat that helps to create a beautiful golden crust on the lamb.
  • Lemon zest and juice: The zest adds a fresh, aromatic fragrance. The juice provides a bright, tangy contrast to the richness of the lamb.
  • Garlic: infuses the lamb with depth and pairs wonderfully with the fresh herbs.
  • Fresh herbs (rosemary and thyme): These herbs add an earthy, fragrant note to the lamb.
  • Salt and pepper: Essential for seasoning, salt enhances all the flavors, while freshly cracked black pepper adds a subtle kick.
  • Potatoes: Roasted to perfection, they become crispy on the outside and soft on the inside. Also, they are the perfect vegetable for soaking up the lamb’s drippings.
  • Carrots: after roasting they become sweet and slightly caramelized. The carrots provide a wonderful balance to the savory lamb and absorb all the juicy flavors.
  • Leeks: Mild and slightly sweet. They add depth to the vegetable mix, becoming tender and flavorful as they cook with the lamb.

Temperature and Roasting Time:

Roasting a boneless leg of lamb is relatively straightforward. The key to a perfect roast is both the oven temperature and the internal temperature of the meat. Here’s a guide to help you roast your boneless leg of lamb:

  1. Preheat the oven to 375°F (190°C).
  2. Roasting time depends on the size of your lamb and how well-done you want it. Here are approximate cooking times:
    • Rare (120–125°F / 49–52°C): 20 minutes per pound
    • Medium-rare (130–135°F / 54–57°C): 25 minutes per pound
    • Medium (140–145°F / 60–63°C): 30 minutes per pound
    • Well-done (150°F / 66°C and above): 35 minutes per pound

Please Note:

After removing the lamb from the oven, its internal temperature will continue to rise by about 5–10°F as it rests.

Roasting Instructions:

  1. Prepare the lamb: Rub the lamb with olive oil, salt, pepper, and your choice of herbs/spices (garlic, rosemary, thyme).
  2. Roast: Place the lamb on a rack in a roasting pan to allow air to circulate around the meat. This will ensure even cooking. Optionally, you can also roast with some vegetables (like carrots, onions, and potatoes) in the pan.
  3. Rest: After removing the lamb from the oven, let it rest for about 15-20 minutes before slicing. This allows the juices to redistribute and ensures the meat stays tender and moist.

Serving Instructions:

  1. Once the lamb has finished roasting, let it rest for about 10-15 minutes before carving. This allows the juices to redistribute and ensures a tender, flavorful roast.
  2. Slice the lamb against the grain for the best texture. Serve the slices on a platter, alongside the roasted vegetables.
  3. For a complete meal, garnish with additional fresh herbs like rosemary or thyme. You can also drizzle any pan juices over the lamb and vegetables.
  4. This dish pairs wonderfully with a simple side salad or some crusty bread.
