Single Chocolate Cookie in an Air Fryer (Gluten Free, Healthy)

When you crave cookies, but it is too hot to turn on the oven you can make a single chocolate cookie in your air fryer. It is so easy and fast. You need only two minutes to add the ingredients in a bowl and mix them together. Then transfer the mixture on a piece of parchment paper and bake for 10 minutes in the air fryer. No need of special equipment or cooking experience. Anyone can make this recipe.
This chocolate cookie is also good for you, because it is made from almond flour, and it doesn’t contain refined sugar. The recipe is also grain and gluten free. Depending on the chocolate you use it can be vegan and dairy free.

Why should you make a single chocolate cookie
I’ve tested this recipe seven times until I perfect it. I wanted to achieve the best taste and texture before I share it. For me I was able to achieve a perfect chocolate cookie with crispy edges and a gooey center. You should give it a try and let me know if you agree with my opinion.
This is a guilt free dessert, because it is lower in sugar and high in valuable nutrients. Since I used almond flour in the recipe the cookie is high in protein and fiber. It also contains a lot of vitamins and healthy monounsaturated fats.
If you make a large batch of cookies, you might be tempted to eat more than one. I know I will. This recipe is good for people who like to eat sweets in moderation. Personally, I don’t like diets, and I believe that we can enjoy every food that we love as long as it is in moderation.
This recipe is also perfect for the hot summer days, when baking is the last thing on your mind, but you still want a cookie now and then. The air fryer is small enough that won’t heat up your living space while baking a single cookie. You can make this single chocolate cookie faster than going to the store.

Ingredients for a single chocolate cookie
- Maple syrup – natural, vegan sweetener that has a lower glycemic index than sugar. You can replace it with light tasting honey if you are not vegan.
- Coconut oil – It is a type of plant based (vegan) source of saturated fat. You can replace it with butter if you prefer.
- Almond flour – made from blanched and grounded almonds. Almonds are delicious and nutritious nuts. They are rich in vitamins, monounsaturated fats, protein and fiber.
- Cacao powder – use unsweetened cacao powder instead of cocoa powder. The cacao powder is raw and less processed. Therefore, it is higher in nutrients and antioxidants. You can use cocoa powder if you prefer. Just make sure that it is unsweetened.
- Baking powder – I use a small amount of baking powder for better cookie texture. You can substitute it with baking soda.
- Chocolate chips – If you want to make these cookies vegan use dark or vegan chocolate. I used chocolate chip from Choc Zero that is sweetened with monk fruit. You can use dark or semi-sweet chocolate chip too.

Baking temperature is 320F instead of 355F! At first, I tested the cookie at 355F but the chocolate chip was burning and cookie was underbaked. So, I started lowering the temperature and 320F gave be the best results.
My air fryer has a burner only on top. If your air fryer has a top and bottom burner increase the temperature to 350F and bake for 7-8 minutes.
The cookie will be slightly soft when it is hot. It might fall apart if you try to move it right away. I leave it in the air fryer basket for at least 5 minutes and then take it out.
