I learned the recipe for spinach salad with yogurt dressing from my mom. It is honestly one of my favorite salads. The recipe is so simple and easy to make, and it is really delicious. She used to prepare this salad for us during the Spring. Since I was born in Bulgaria, we had fresh spinach only then. Therefore, I always associate this salad with springtime. Also, it is light crunchy and fresh. Isn’t that everything you look for when you think of a salad?

You should make this salad because it is a nutrient bomb. Spinach is an amazing leafy vegetable. It is a good source of iron, manganese, vitamins A, C and K. There are also a lot of antioxidants in spinach. Pairing it with yogurt dressing makes it even more beneficial for the health. Yogurt is high in calcium and it contains live probiotics. This salad is excellent food for gut health because it has probiotics, prebiotics and a lot of fiber in one serving.

Another reason for you to make this salad is that it takes about ten minutes of work. Absolutely anyone can prepare it. No need to chop a lot of vegetables. You can use a press for the garlic. All you have to do is add the spinach in a bowl and make a quick dressing for it.

I would serve it with my pistachio crusted rack of lamb or with my meat and egg muffins. It can also be eaten on its own as a light vegetarian lunch or dinner. No matter how you decide to serve this salad I can guarantee that it will bring freshness to any meal.

Ingredients

  • 6 oz fresh baby spinach (washed and cleaned)
  • ½ cup greek yogurt
  • 1 large garlic clove pressed of finely chopped
  • ¼ tsp salt
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp fresh chopped dill

Instructions

  • First I go over the spinach and trim the big stems. Then I wash it thoroughly and dry it, by placing it on a towel.
  • Make the dressing by combining the yogurt, garlic, salt, dill and olive oil in a bowl and stir it well.
  • Then drizzle the dressing over the spinach and stir it well.
  • Serve immediately.

Notes

Salt may need to be adjusted depending on taste preference.
