How to Make Teriyaki Chicken in Pineapple Bowls at Home

Teriyaki Chicken is one of my favorite meals to make at home. The sweet and savory sauce pairs perfectly with tender chicken thighs, fluffy rice, and roasted broccoli. A drizzle of extra sauce and a touch of sriracha mayonnaise take the flavors to the next level. It is colorful, delicious, and better than takeout.

For this recipe, I serve the Teriyaki chicken in pineapple bowls for a fun and tropical twist. I also prepare a delicious topping made with cubed pineapple, cucumber and scallions. This meal looks and tastes impressive. The pineapple bowls are perfect for family dinners or entertaining guests. One added bonus of this recipe is that at the end of the night there will be less dishes to wash.

Why Homemade Teriyaki Chicken Is Better Than Takeout?

Homemade teriyaki chicken always tastes fresher than takeout. You control the quality and the amount of the ingredients. Every bite is packed with flavor, and nothing sits under a heat lamp or travels across town in a box.

Cooking at home also saves money. One order of teriyaki chicken at a restaurant usually costs more than making this entire recipe for your family. Plus, you can make generous portions and even enjoy leftovers for lunch the next day.

Another reason homemade teriyaki chicken is better is that you control what goes into the sauce. Many restaurants use bottled glazes that are too sweet or loaded with additives. My recipe uses simple pantry staples to create a balanced sauce with the perfect mix of salty, sweet, and savory flavors.

Finally, cooking this dish at home makes it fun. Serving teriyaki chicken in a pineapple bowl turns a weeknight dinner into something special. It looks festive, tastes amazing, and brings a little restaurant flair to your own kitchen.

Tips for Making the Best Teriyaki Chicken Pineapple Bowls

  • Use chicken thighs. They stay juicy and tender even after cooking in the sauce.
  • Cook the chicken in a hot pan. A good sear gives extra flavor and keeps the meat from drying out.
  • Don’t rush the sauce. Let it simmer until it thickens and clings to the chicken. That glossy finish makes the dish look and taste amazing.
  • Pick a ripe pineapple. It should be fragrant and slightly soft to the touch. This ensures the salsa is sweet and fresh.
  • Make your own Sriracha mayonnaise. You can combine mayonnaise that you like with a few drops of Sriracha sauce or use this recipe.
  • Assemble just before serving. The pineapple bowl looks best when it is freshly filled with rice, broccoli, and chicken.

How to Customize This Recipe

This teriyaki chicken recipe is flexible and easy to adjust to your taste. If you don’t like broccoli, swap it with snap peas, zucchini, or bell peppers. For a low-carb option, try cauliflower rice instead of white rice. You can also make it spicier by adding more sriracha or a sprinkle of red pepper flakes.

The pineapple bowl is optional, but it makes the meal feel festive. If you don’t have fresh pineapple, you can still serve the chicken over rice in a regular bowl and add canned pineapple chunks or mango for sweetness. This way you keep the tropical vibe with less prep.

Storage and Reheating

If you have leftovers, store the teriyaki chicken, rice, and vegetables in separate airtight containers. Keep the pineapple salsa in the fridge in its own container so it stays fresh. Everything will last for about 3–4 days.

When reheating, warm the chicken and rice in a skillet or microwave until hot. Add a splash of water if the sauce looks too thick. The salsa should be served cold, so add it on top after reheating the rest of the meal components. I don’t recommend saving the pineapple shell for later, but the meal tastes just as good in a regular bowl.

Instructions

To prepare the Teriyaki Sauce

  • In a small saucepan add the soy sauce and heat to medium heat. Then add the sugar, honey, ginger, garlic and rice vinegar. Stir until the sugar is melted.
  • In a separate bowl combine the water with the cornstarch and stir well.
  • Add the cornstarch mixture to the saucepan and stir. Reduce the heat and continue to stir until the mixture thickens. If the sauce coates the back of the spoon it is ready.
  • Add one teaspoon of sesame oil to the sauce and stir again.
Remove from the heat and set aside to cool off.

To cook the ingredients for the bowl

  • Cook one cup of rice according to the instructions on the package.
  • Cut the chicken tights to bite-sized pieces.
Add a tablespoon of oil in a pan and heat it to medium heat.
Add the chicken tights in the preheated pan and cook for several minutes per side. Stir occasionally until the chicken is cooked through.
Then remove from the heat and add half of the teriyaki sauce to the pan with the chicken. Stir to combine.
  • Cut the broccoli to small florets. Roast them at 400 ℉ for 15-20 minutes.

To make the pineapple bowls

  • Slice the pineapple in half lengthwise. Then, cut a rectangle into the fruit about half an inch from the edge and make angled cuts from that circle to the stem to separate the fruit from the shell. Scoop out the fruit with a spoon, leaving the shell intact to create a boat shape.
