Toasts With Feta And Eggs (Only Three Ingredients)

These toasts with feta and eggs are one of my favorite breakfasts. They are so yummy, and you need only three ingredients to prepare them. The feta toasts are very well known and loved in Bulgaria. As a child I used to enjoy them for breakfast at least once a week. The recipe is easy and fast, and it doesn’t require special skills or knowledge.

Why should you make this recipe?
These toasts with feta and eggs are probably the easiest recipe I would share with you. You need just three ingredients and fifteen minutes of work.
If you love feta, you will love these toasts. They are best when they are served warm. I usually have some hot herbal tea with them. It is just the perfect combination. A fresh tomato and cucumber salad also goes very well with these toasts.

Helpful Tips
It is best if you use stale bread for this recipe. The dry bread absorbs the egg and feta mixture better than a fresh one.
Depending on the size of the bread you can end up with 8-10 toasts.
You can improvise and add other ingredients you like. When I was a child, my mom sometimes added cubed ham or herbs into the egg and feta mixture.
I prefer to use cow feta in brine. This is my favorite type of feta, because it is creamy and milder in taste. Unfortunately, it is not easy to find. I buy it from an international store, or I order it online. You can use whatever feta you have and like. I don’t recommend using feta that is already crumbled, because it has additives and anti-caking agents.
I don’t usually add salt in this recipe. The feta I use is salty enough. You can add spices and seasonings you prefer.
Store any leftover toasts in a food safe container in the fridge for 2-3 days. You can reheat them in a toaster oven before serving.

Toasts with Feta and Eggs
Ingredients
- 8 slices of stale bread
- 5 large eggs
- 1 lb feta cheese cow's or sheep's
Instructions
- Preheat the oven to 380F. Cut 8-10 slices of stale bread and put them on the baking sheet with an oven safe cooling rack.
- Crumble the feta in a bowl. Break the eggs one by one in the same bowl and stir until combined.
- Spoon the mixture over each slice and spread it.
- Toast the sandwiches until golden brown.
