Equipment for the white chocolate cheesecake

  • A food processor – you may need one to make the crust for the cheesecakes. Don’t worry if you don’t have one. An easy way to crush graham crackers is to put them in a Ziplock bag and hit them with a rolling pin or something heavy. Then transfer the crumbs into a bowl and mix them up with the melted butter.
  • A mixer – to prepare the cheesecake mixture you are going to need a hand or stand mixer. You can also use a regular whisk, but that would take a bit more effort.
  • Measuring cups and spoons – they are essential for any baking recipe.
  • A mixing bowl – any mixing bowl that is deep enough and mixer friendly will do. I used a glass bowl.
  • 10-inch springform pan – for me this is the best size for a cheesecake.
  • 14-inch and 12-inch round pans for the water bath. I used these pans.
  • Oven mitts  – to protect your hands from the high temperatures and the hot oven.

How To Melt Chocolate?

I usually create a water bath to melt the chocolate. This means that I put a pot of water underneath the bowl with the chocolate. I heat up the pot until the water inside starts simmer an turn off the heat. I stir the chocolate until it is fully melted. Do not allow the water to start boiling because it might ruin the chocolate.

You can also melt the chocolate in the microwave. Put your chocolate in a microwave safe bowl and heat it for about a minute on high. Stop the microwave and stir it occasionally (every 15 seconds) so it doesn’t burn.

Helpful tips about making the White Chocolate cheesecake

  • Bring the cream cheese to room temperature before you start. It has to be soft in order to achieve a smooth cheesecake mixture. It is best if all the ingredients are at room temperature.
  • Cool off the melted chocolate before you add it to the cheesecake mixture. If you add it while it is still hot it might cook the eggs and ruin the texture of the cheesecakes.
  • Do not overmix your cheesecake batter. If you mix for too long you will incorporate too much air into the mixture. This will cause the cheesecake to rise too high in the oven and then have cracks and dips in the middle.
  • Do not overbake the cheesecake. Take it out of the oven the minute it is set around the edges. The middle should be jiggly. Cool the cheesecake off for at least 30 minutes before you put it in the fridge.
  • The longer you chill the cheesecake the better it is going to taste. I recommend making it ahead of time and refrigerate overnight for best results.

Why there are cracks and dips in your cheesecake

  • Overmixing the Batter – this can introduce too much air into the cheesecake, causing it to rise during baking and then collapse, leading to cracks or dips. Mixing just until the ingredients are combined helps maintain a smooth, dense texture.
  • Baking at Too High a Temperature – this can cause the outer edges to cook too quickly while the center remains undercooked. As the cheesecake cools, the rapid change in temperature can lead to cracks.
  • Not Using a Water Bath – (or bain-marie). The water bath helps regulate the temperature of the cheesecake while it bakes, ensuring even heat distribution and preventing cracks. Without it, the cheesecake can dry out, leading to cracking. If you don’t have a water bath, at least place a pan of water on the lower rack of the oven.
  • Sudden Temperature Changes – such as taking the cheesecake from a hot oven to a cold countertop, can cause the cheesecake to crack. Also, opening the oven door during baking.
  • Undercooking or Overcooking the Cheesecake – If a cheesecake is undercooked, it may sink or dip in the center as it cools. On the other hand, overcooking can cause it to crack or become dry. The cheesecake is done when it’s slightly jiggly in the center but firm around the edges.
  • Too Much or Too Little Cooling Time – Trying to cool the cheesecake too quickly can lead to cracking. Let it cool slowly at room temperature before refrigerating. Likewise, refrigerating a cheesecake before it’s fully cooled can also cause dips or cracks as it settles into a firmer texture.
  • Cheesecake is Too Cold When Baked – If the batter is too cold when you start baking, it may not bake evenly, leading to cracks. Make sure that your ingredients are at room temperature.

Serving and Storing instructions

For the best presentation, serve it chilled, topped with a generous drizzle of the strawberry syrup just before serving. If you have leftovers, store the cheesecake in an airtight container in the refrigerator for up to 4–5 days. For longer storage, you can freeze individual slices by wrapping them tightly in plastic wrap and foil. Simply thaw in the fridge overnight before serving. This cheesecake also holds up well in the freezer, making it an ideal dessert to prepare ahead for holiday gatherings!

A 10-inch cheesecake typically yields 12 to 16 servings, depending on how large or small you cut the slices. If you cut generous slices, you’ll get closer to 12 servings, while smaller slices could stretch it to 16. For a more precise serving size, you can calculate based on the thickness of each slice, but generally, 12 to 16 is the standard range for a 10-inch cheesecake.

Ingredients

For the crust

  • ⅓ cup sour cream
  • 1 cup powdered sugar or icing sugar
  • 3 large eggs
  • 1 cup heavy whipping cream
  • 12 oz white chocolate (melted) I used Ghirardelli premium baking chocolate

Strawberry syrup

  • ¼ cup sugar or to taste
  • 1 Tbsp freshly squeezed lemon juice

Toppings

  • fresh strawberries, whipped cream or mint optional

Instructions

Before you start

  • Your cream cheese, sour cream, heavy cream and eggs should be at room temperature. It is very important to take them out of the fridge t least an hour before baking.

To make the graham cracker crust

  • Preheat the oven to 350 F.
  • Use a food processor or blender to crush the graham crackers to crumbs. Add the melted butter and blend one more time until you have a wet sand consistency.
  • Transfer the graham cracker mixture to a 10 inch springform pan. Press it down to the bottoms and sides of the pan until you have an even layer. You can use the bottom of a heavy glass or a spoon
  • Bake the crust for 15 minutes.
  • Once your crust is baked set it aside to cool off.

To make the cheesecake filling

  • Start by melting the chocolate. Then cool it off until it reaches a room temperature. Detailed instructions about how to do that are in the blog post.
  • Preheat the oven to 350 F.
  • In a mixer safe bowl add the softened cream cheese, sour cream and the powdered sugar. Mix on low speed until combined.
  • Then add the eggs (one at a time) and mix to combine.
  • Finally add the melted (cooled off) white chocolate and the heavy whipping cream. Mix on low to combine. Do not overmix or you might get cracks and dips.

How to bake the cheesecake

  • Place a kitchen towel on the bottom of the 14-inch round pan. Then fill it halfway with water. In the 14-inch round pan (on top of the towel) place a 12-inch round pan. In this 12 inch pan add the 10-inch pan with the cheesecake. This is the only way I bake a cheesecake because it prevents water (from the water bath) entering in the springform and ruining the cheesecake.
    Picture of cheesecake before baking
  • Bake for one hour at 350F.
  • When the cheesecake is set around the edges but slightly jiggly in the middle it is ready. Carefully take it out of the oven. Cool it of at room temperature for at least an hour before putting it in the refrigerator.
  • I recommend chilling for at least 8 hours in the refrigerator before serving.

To prepare the strawberry syrup

  • Add the strawberries and the sugar in a small pot. I used frozen strawberries. Cook for 5 minutes on medium heat until the strawberries are really soft and falling apart. Stir often. Then mash them with a potato masher or blend with an immersion blender. Depending on what texture you want for your sauce you can leave it chunky or smooth.
  • Add the lemon juice, stir and remove from the heat. Cool off the sauce for an hour at room temperature. then transfer it in a jar or a clean food container with lid. Refrigerate for at least 4 hours.

Serving instructions

  • Carefully remove the cheesecake from the springform pan and place it on a serving pan.
