White Sauce Pizza with Two Chicken Drumsticks and Mushrooms

White sauce pizza is my favorite type of pizza. I love that creamy and smoky taste with every bite. I’m very picky when it comes to pizza. If I’m going to eat a lot of empty calories at one meal, the pizza better be good. My philosophy is to eat everything that I want but most of the time to focus on nutritious foods. Once in a while I crave a meal that has no nutritional value, but it feeds my soul. This recipe is a perfect example of that meal.

I haven’t met a person who doesn’t love pizza. Homemade pizza is a meal that the whole family will appreciate. Yes, it will take some effort and time to prepare it, but the end result is much better than any takeout pizza.

This white sauce pizza is an excellent way to use some leftovers. If you have two chicken drumsticks and you don’t know what to do with them, you can make this recipe.

I’ve created this recipe as a guide that will teach how to make 5 delicious meals from one whole chicken. I usually buy a whole chicken and cut it to 9 parts. The carcass and the wings are perfect to make a soup. I make a salad from one breast and pasta with the other one. I save the drumsticks for a pizza, and I make several quesadillas or a stir fry with the thighs.

Helpful tips

How to measure flour? Always scoop more flour than you need in your cup and use a knife to level it off. If you have a scale use it, because measuring ingredients by weigh is always more accurate. One cup of flour contains exactly 4 oz or 125 grams of all purpose flour.

The order of the ingredients matters when you are making a dough. never add the salt with the yeast. This might inhibit its action. I add the salt last.

You might need more or less flour. It depends on the type and the brand of flour that you use.

It is very important to add the flour gradually until you have soft and stretchy dough. If it is sticking to your hands and you cannot form it to a ball, then you need a bit more flour.

Proof the dough away from AC vents and drafts. The dough should be covered or it is going to form a crust.

Use a low heat when you make the sauce for the pizza. If it boils you might end up with a broken sauce. Stir it gently while it simmers.

I always grate my own cheese. Use real freshly grated Parmesan for this recipe. No fake boxed powder.

Ingredients

Ingredients for the dough

  • ¾ cup lukewarm water
  • ½ tsp sugar
  • 2 tsp active dry yeast
  • 1 tsp olive oil
  • cup all purpose flour
  • ½ tsp salt

Ingredients for the sauce

  • 1 Tbsp unsalted butter
  • 1 garlic clove pressed or finely chopped
  • 1 cup heavy whipping cream
  • ¼ cup freshly grated Parmesan cheese
  • 1 Tbsp cream cheese
  • salt and pepper to taste

Toppings

  • 2 chicken drumsticks
  • 1 cup sliced mushrooms I used Crimini/ Baby Bella
  • 1 cup grated smoked Gouda

  • nonstick cooking spray
  • extra flour for rolling the dough

Instructions

To make the dough

  • Add the water, sugar, yeast, oil, a cup of flour in a bowl and stir well. Then add the salt and continue adding flour and stirring. When it gets too hard to stir transfer the dough on a floured surface and knead gradually adding flour until you have soft and elastic dough. You can also make the dough in a stand mixer.
  • Transfer the dough in the mixing bowl. Cover it with a towel or a plastic wrap and proof for 50 minutes.

Cook the chicken drumsticks

  • While the dough is rising bake your chicken drumsticks. Preheat an oven to 400F and place them on a baking sheet. Season them with salt and pepper and bake or air fry until they have an internal temperature of 165F. (about 12-15 minutes)

To make the sauce

  • Put a deep pan on a burner and preheat it to low. Add the butter and the pressed garlic in the pan. heat. Cook the garlic for a minute, add the cream and stir. Once the cream is simmering add the cream cheese and the parmesan. Stir slowly until the cream cheese dissolves and the sauce thickens. Then remove from the burner and taste for seasoning. Add salt and pepper if needed.

To assemble the pizza

  • Preheat the oven to 480F. Spray a round (16-inch) pizza pan with nonstick cooking spray Separate the cooked chicken meat from the bone and skin. Slice the mushrooms thinly and grate the smoked Gouda.
  • Once the dough is proofed transfer it to a floured surface and roll it thinly to a circle with a diameter of about 15 inches. Then carefully transfer it in the pan.
  • Spoon the sauce on top of the dough and spread it. Leave about an inch of the edges without sauce.

  • Add the grated Gouda, sliced mushrooms and the chicken meat leaving only the board of the pizza without any sauce or toppings.

  • Bake 15-20 minutes or until the dough is golden brown and the cheese is melted and bubbly. Serve while it is still warm.
