Low Carb Cinnamon Coconut Cookies

Ingredients

  • 6 Tbsp coconut oil
  • 5 Tbsp monk fruit sweetener (I use Lakanto)
  • 3 Tbsp almond butter (peanut butter works too)
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 6 Tbsp coconut flour

Instructions

  • Preheat the oven to 350 F
  • Line a baking sheet with parchment paper.
  • Add all the ingredients in a bowl and mix them well.
  • Use a small cooky scoop to form the cookies and flatten them a little bit.
  • Bake for 10 minutes.
  • Once they cool for 3-5 minutes use a spatula to move them to a cooling rack.
