If your bonbon is falling apart and you can’t form a ball, then add some more coconut oil to the mixture.
Depending on the size of your blueberries you can end up with 15-20 bonbons.

Coconut Bonbons with Whole Blueberry Center
Ingredients
- 1 cup almond flour
- ½ cup coconut flour
- 5 Tbsp melted coconut oil
- 5 Tbsp maple syrup
- 1 tsp vanilla extract
- the zest from one lemon
- fresh blueberries about 18
- unsweetened shredded coconut
Instructions
- Measure and add all the ingredients in a bowl.
- Stir until you get wet sand consistency.
- Take about a tablespoon of mixture in your hand and flatten it between your palms. Add a whole blueberry in the center.
- Using your palm and fingers carefully press the mixture (dough) around the blueberry to form a ball.
- Form 15-20 balls (depending on the size of your blueberries).
- Roll each bonbon in unsweetened shredded coconut. Store in a refrigerator 4-5 days.
