  • 1 cup almond flour
  • ½ cup coconut flour
  • 5 Tbsp melted coconut oil
  • 5 Tbsp maple syrup
  • 1 tsp vanilla extract
  • the zest from one lemon
  • fresh blueberries about 18
  • unsweetened shredded coconut


  • Measure and add all the ingredients in a bowl.

  • Stir until you get wet sand consistency.

  • Take about a tablespoon of mixture in your hand and flatten it between your palms. Add a whole blueberry in the center.

  • Using your palm and fingers carefully press the mixture (dough) around the blueberry to form a ball.

  • Form 15-20 balls (depending on the size of your blueberries).
  • Roll each bonbon in unsweetened shredded coconut. Store in a refrigerator 4-5 days.
