How to melt the white chocolate?

You can melt white chocolate in the microwave, on the stovetop, or over a double boiler (water bath). No matter which method you choose, melt it slowly to prevent the chocolate from burning or becoming grainy.

  • Microwave: Place the white chocolate in a microwave-safe bowl. Heat it in 20-second intervals, stirring well after each interval until smooth. Stop heating as soon as the chocolate melts.
  • Stovetop: Place the white chocolate in a small saucepan over very low heat. Stir constantly until it melts. Remove it from the heat immediately to prevent scorching.
  • Double Boiler (Water Bath): Fill a small saucepan with about 1 inch of water and bring it to a gentle simmer. Place a heatproof bowl over the saucepan, making sure the bottom of the bowl does not touch the water. Add the white chocolate and stir until smooth.

Tip: Keep water away from the chocolate while it melts. Even a few drops of water can cause white chocolate to seize and become thick and grainy.

Helpful Tips About making the Frozen Yogurt Bark

  • Use whole, plain, or Greek yogurt. Whole yogurt contains more fat, which helps create a creamier frozen yogurt bark and reduces the chance of ice crystals forming.
  • Bring the yogurt to room temperature. If you add melted white chocolate to cold yogurt, the chocolate may harden and form large clumps.
  • Whisk the yogurt and white chocolate together. A whisk helps create a smooth mixture and breaks up any small chocolate clumps.
  • Wash the fruit well. Remove any dirt, stems, and pits before adding the fruit to the yogurt mixture.
  • Pat the fruit dry. Use a paper towel or clean kitchen towel to remove excess moisture. Too much water can create ice crystals in the frozen yogurt bark.
  • Spread the mixture to your preferred thickness. Make it as thin or as thick as you like. I usually spread mine to about ½ inch thick for a creamier bite.
  • Slice or break the bark. You can break the frozen yogurt bark into rustic pieces or slice it into even squares. I prefer slicing it for neat, evenly sized servings.
  • Use a cupcake liner when serving. Place each piece in a paper muffin liner to keep your fingers from getting cold and sticky while you enjoy this frozen treat.

Serving and Storing

Serving

For the creamiest texture, remove the frozen yogurt bark from the freezer 2 to 3 minutes before serving. This gives it a chance to soften slightly and makes it easier to bite into.

I like to serve each piece in a paper cupcake liner. It keeps my fingers clean and helps prevent the frozen yogurt bark from melting too quickly from the warmth of my hands.

Storing

Store the frozen yogurt bark in a freezer-safe zip-top bag or an airtight freezer-safe container for up to 3 months.

To prevent the pieces from sticking together, place a sheet of freezer paper or parchment paper between each layer before storing. This makes it easy to grab a single piece whenever you’re craving a cool summer treat.
